Often we would like to serve steak at family night, weekend barbecue, special occasions, etc. but with the word 'steak' we think 'expensive'. However steak can be worked into the budget with a bit of advance planning and by maximizing savings by using steak coupons on bargains, deals and promotions. It also helps to know a little about steak cuts, and steak grades when purchasing. A steak is defined as a slice of meat, usually beef that will be broiled, grilled or fried. A few things to consider when purchasing steak are the: grade, cut, marbling, aging. Grading is done by the USDA (or a third party organization) in which the age and marbling of the meat are determined and ultimately marked as either: prime, choice and select in that order. Marbling is the visual appearance of thin fat streaks in a piece of meat and little or no marbling indicates a lean, perhaps more tender and less flavorful steak. Meat with obvious marbling generally has a better flavor but may be less tender. Aging is another consideration with dry aging considered better than wet aging or no aging, but this is often a matter of taste. Cuts of beef are categorized according to the area where the cut originates : chuck, shank, brisket, rib, short plate, loin, sirloin, round, miscellaneous cuts. Many of the tenderest steaks which are good for grilling, broiling or frying generally come from the loin, sirloin and rib areas. Beef breeds are considered important to some and a few popular breeds are: Angus, Wagyu (Kobe beef), Charolais, Limousin, Maine Anjou and many others. Nowadays beef may also be labeled according to cattle diet and preference is a matter of taste: free range, grass fed, corn fed, grain fed, grain finished, etc. Loin and tenderloin steaks include: t-bone steak, Portherhouse steak, sirloin steak, filet mignon, tenderloin steak, Kansas City steak, strip steak, Chateaubriand, fillet steak, top loin steak, New York strip steak, ambassador steak, hotel-style steak, club steak and others. Rib steaks include: ribeye steak, Delmonico steak, boneless rib steak, rib steak, market steak and others. Round steaks know for less tender meat include: minute steak, sandwich steak, top round London broil, round steak and others.
