What's for dinner?

Moms View Message Board: General Discussion: Archive January 2007: What's for dinner?

I am making corned beef and cabbage in the cpot. I usually only make this once a year for St. Pat's Day but at the market yesterday I saw the meat and thought why not? Everyone loves it.

I am going the easy way out tonight. I think I will buy a rotissary (sp?) chicken and just cook some veggies and maybe some rolls or something.

We're supposed to make dinner...EVERY night???:)

I don't have a clue. DH is home tonight so I'm not going to be able to just heat something up. Hmmm...I'd better figure it out! Thanks for the reminder!

Crock pot BBQ chicken, green beans, macaroni (for veggie-intolerant DH!!!grrrr), baked potato, and salad.

I am not even dressed today! I haven't been feeling good, but I guess if I have to feed the kids it will be burgers with something....

Sloppy Joes and fries. Easy and good!

By Kaye on Tuesday, January 9, 2007 - 06:08 pm:

chicken broccoili crosants

pretty simply, i taked cooked chicken and brocilli, chop it up, mix in cheddar cheese and some mayo and the roll into crossants and then bake as directed on the package, i often do one big one (think pampered chef taco ring), but it depends who I am serving!

Mmmmm...Kaye, I'm going to have to try that! We are having a new recipe. Chicken noodle casserole. I'll have to let you know how that turns out! LOL!

I'm so tired of eating the same things all the time, but I hate trying something new, and risking us not caring for it. But finally we decided to take the plunge, and I have several new recipes that we are trying. We've made the deal that everyone will try it with an open mind, but no one has to feel obligated to tell me they like it if they don't, to spare my feelings! I want honest opinions so I know what to make again!

Ok, I've decided on Chicken Cordon Bleu with pasta and broccoli. Now I just have to decide if I want to make a dessert or not. I don't need it but DH loves it when I include something sweet.

Mac 'n' cheese. That's it. I guess we weren't very hungry :-)

We had baked salmon, rice pilaf and a vegetable medley. I try to get salmon into DH once a week because of all of his heart issues. He USED to be a big beef eater.

KC Masterpiece makes a delicious Honey Teriaki marinade that I put on the fish and wrap in foil. It comes out SO good. In the summer, we do it on the grill instead of the oven. I buy a big bag of frozen salmon fillets in Sam's Club for about $17.00. We get about three meals out of it.
