Melting Chocolate advice
The last time I made chocolate covered pretzels. the chocolate never really set up nice. I am going to make peanut butter balls today and dip them in chocolate, but I was wondering what I could do to get the chocolate to set up better. Someone told me about Gulf Wax and mixing it in the chocolate, but I'm not sure if that is safe. Also, how much would I put in? Is there anything that would work better? Thanks for any advice.
I just finished making choc covered pretzels. I do them every year - I just put the choc chips in a pan and melt on low heat, stirring constantly. Make them quick and put on wax paper which is on a cookie sheet and then stick in the freezer for 5-10 minutes to set the chocolate.
When I make Martha Washington's I melt parafin wax in with the chocolate that I dip them in. It sets up nicely. I always just melt the white almond bark for pretzels and it sets up nicely as well. I had trouble with my tiger butter candy last week. argh I think I bought the wrong choc chips or something? Is there a kind of choc chips that dont melt well? That's what I must have grabbed at the store. The candy is awful. I need to throw it all away and start over.
We just melt the chocolate chips in the microwave. Just go 1 minute at a time, then stir in between. When it's all melted, we add a teaspoon of vegatable shortening to keep the chocolate shiny
We use parafin also. Just use a little. With the peanut butter balls, we make the balls and put in the freezer for 30 minutes. The chocolate sets pretty much immediately.
Parafin wax here too. My mom always did that for our buckeyes. I skipped that a couple of times or tried a bit of vegetable oil and it definitely left the chocolate softer.

The one year i made buckeyes, i used the Gulf Wax but i think i used too much. All i could thing about while eating them was that i was eating wax LOL. But like i said, i think i used too much wax and they didn't come out very good. mmmm, maybe i will try again! It sounds so goood!
I just made some pb balls yesterday and used 1/4 cup of shortening to each cup of chocolate chips, it worked out just fine.
Tiger Butter Candy: Melt: 1pkg white almond bark Stir in: 1 jar CRUNCHY peanut butter Pour: onto wax paper lined cookie sheet, spread out. Melt: 1pkg choc chips Drop by spoonfuls every so often, onto the mixture in cookie sheet. Now with a butter knife, drag tip of knife (zig zag) from one end of pan to the other. Keep repeating from end to end and from side to side. You will end up with a swirled pattern (tiger stripes if you will)... Place in freezer for 15-20 min. Remove and break into bite size pieces. I leave mine in ziploc bag in the freezer unless we are having guests then we will set it out on a tray. Very easy! Martha Washingtons- I dont have my recipe from home and cant remember exactly how to make. I can tell you what they are tho. Chocolate covered balls of candy. The center is a mixture of coconut, pwd sugar, butter, chopped pecans and something else??? Anyway, they are rich. What are buckeyes?? seems like i should know...
Buckeyes are peanut butter balls dipped in chocolate. You leave just one end undipped and they look like buckeyes!
