Heidi's Oven Fried Chicken...you might already have the ingredients!
Since some of you asked on the chicken post...here it is! I posted it online here a while ago. But, here it is again. ***I cut the amount of cornflakes and butter if I'm only feeding DH and myself and using 2 chicken breasts. I also cut the time down 5-10 minutes.*** Oven Fried Chicken Prep: 14 minutes Cook: 45 minutes Yield: 4 servings You might enjoy this alternative to fried chicken more than you think. The crispiness comes from a corn flake coating and a high oven temperature. Ingredients: 3 cups corn flakes cereal, crushed (makes about 1 cup) 1/3 cup grated parmesan cheese 1 teaspoon salt 1/4 teaspoon garlic powder 1/4 teaspoon pepper 1 (2 to 3 pound) package of assorted chicken pieces, skinned 1/2 cup butter or margarine, melted Combine first 5 ingredients in a large heavy duty, zip-top plastic bag; seal and shake well. Dip chicken pieces in butter, 2 at a time, and place in bag. Seal and shake to coat chicken completely. Remove chicken, and repeat with remaining chicken pieces. Place chicken on a slightly greased pan. Sprinkle remaining corn flake crumbs over chicken pieces. Bake, uncovered, at 400 degrees for 45 minutes or until done. Serve hot.

Sounds great, Heidi! I make this the same way, without the Parmesan cheese, and our family LOVES it! I'll definitely try it with the cheese because we love Parmesan! I hope you know I was just teasing you about the Colonel Sanders thing...

I have sometimes used a package of chili flavoring powder mix instead of other seasonings for oven-friend chicken. But that was when I was fixing chicken for 4 - in other words, 8-10 pieces. If I were fixing only 4 pieces, I'd use a third to half of the chili flavor mix.
