Favorite camping foods?
My darling (still) bf and I are going camping in a couple of weeks and I almost always bring the food (otherwise we'd just eat smokies) so I'm polling you gals to see what your faves to take are. We only cook over the fire when we're there and we take our small coleman stove which we only use for making coffee. I've already got...potato salad, smokies, havarti, crackers, smore's fixin's, fruit, steaks (more for him than me) bagels, cream cheese, coffee, hot chocolate and milk and trail mix, I'll also be taking the fixin's for his fave sandwiches which includes, meat, cheese, sprouts, avocado, tomatoes, mayo, mushrooms, mustard etc. cottage cheese on my list. I like to eat well when I'm there even though I'm camping cause I'm the healthy type and up there my appetite is more (of course with all the fresh air), I'd like to vary the menu a little. Any suggestions?
One of my favorites is to cut up various veggies and marinate them in fat free italian dressing. Place them in foil, sprinkle on Veggie Seasoning (I think it's called McGrill...the same company makes the montreal steak spice) and cook in the fire.
We went camping this weekend...our menu was this... Friday night, pasta with sauce and salad and bread. Sat breakfast, pancakes and bacon Sat lunch, bbq sandwiches, potato salad, green beans Sat dinner, burgers and dogs and chips, peach cobbler for dessert Sun breakfast egg hash (eggs, cheese, hash browns, bacon and cheese). I have done the foil packs in the past, the key is one meat, one starch on the bottom, 1/4 cup of liquid and a veggie. My fav is ham, pineapple juice and slice and sweet potatos. We often do fajitas, then for breakfast use the left over meat and some eggs and cheese for breakfast tacos. We have also done chicken and dumplings with the left over meat. We most use the fire or the dutch oven.
We went camping this past weekend as well. This is quite abnormal for Northern ALberta in April!! Our menu was: Friday night: steak, corn on the cob, baked potatoes, salad, grilled veggies (as above) Saturday: Breakfast: cereal and toast (first trip, forgot the eggs ) Lunch: dogs, salad, chips Supper: buffalo burgers (I had chicken burgers), salad Sunday: breakfast: as above Lunch: left overs
