Pink Grapefruit, Strawberry, and Champagne Granita with Sugared Strawberries
Bon Appé••• | April 2004

type Frozen Dessert

Ingredients1 1/4 cups sugar, divided
3/4 cup water
1 cup small strawberries, hulled (about 6 ounces)
3/4 cup fresh pink or ruby grapefruit juice
2 1/4 cups chilled brut Champagne

1 1/2 teaspoons grated lemon peel
9 teaspoons mascarpone cheese*
18 whole small strawberries

PreparationStir 3/4 cup sugar and 3/4 cup water in large saucepan over low heat until sugar dissolves. Cool. Puree 1 cup strawberries in processor. Whisk 1/2 cup puree into sugar syrup. Mix in grapefruit juice, then Champagne. Pour mixture into 8-inch square metal baking pan. Freeze mixture until firm, stirring every 2 hours, about 6 hours. (Can be made 2 days ahead. Cover; keep frozen.)

Mix remaining 1/2 cup sugar and lemon peel in pie plate. Spread 1/2 teaspoon mascarpone around pointed tip half of each whole strawberry. Dip in lemon sugar to coat mascarpone.

Moisten rims of 6 Martini glasses with water; dip rims into remaining lemon sugar. Scrape fork across surface of granita to form ice shavings. Mound granita in glasses. Garnish with sugared berries and serve immediately.

*Available at Italian markets and some supermarkets.

Test-kitchen tip:
To coat Martini glass rims with sugar, barely moisten fingertips and run around edge of each glass, then dip rims into sugar mixture. Keep the coated glasses in the freezer for up to two days before serving the granita.

Pink Fruit Salad. I would just make a fruit salad with peach and pink type fruit and bananas too. I was just at a party and everyone was eatting the fruit salad.

The only thing I can think of is the pink snack treat I just to eat as a kid with white cream in the middle and pink sugar on the top. It was round.

Thanks for the ideas.

I was hoping for something simple. These look yummy.
I had googled pink desserts and only come up with some complicated, sophisticated recipes.

ok, this is probably going to sound weird, but it really is good, we had it pretty often when I was a kid ....

Fruit-ish salad involving cool whip, pineapple, cottage cheese, red/pink jello (just the powder to add color and flavoring, could use differnt color/flavors of jello to achieve the desired color), chopped nuts are optional .... sounds gross as I write it, but it WAS good, I promise !

Don't know the name of that salad, but I think those are all the ingredients .... don't hold that recipe against me, ok ? hahaha !

Pink Jello with fruit!

pink triffle

By Enchens on Monday, January 5, 2009 - 11:07 am:

Aha! How about rice krispy treats...with pink marshmallows? I saw pink marshmallows at the grocery store and I know rice krispy treats are fairly simple to make.

By Feona on Monday, January 5, 2009 - 01:22 pm:

That sounds good. It will be easy to transport too.

By ~harlena on Tuesday, January 6, 2009 - 07:19 am:

yepper, Enchens, yours is the simplest, easiest and most importantly the YUMMIEST sounding !

What did you end up going with Imamommyx4 ?

By Breann on Tuesday, January 6, 2009 - 12:46 pm:

We make a pink jello-ish salad.

1 box strawberry or raspberry jello
1 container cottage cheese
1 container coolwhip

Mix and let set for about an hour before serving. You can also add fresh cut strawberries or raspberries to it.
