Need idea please
Saturday is my sister's baby shower, immediately afterwards we're heading over to a "beginning of summer" party and the theme is MEXICAN FIESTA. The hosts are providing the main dishes and have asked us all to bring appetizers and side dishes. I've RSVP'd that I would be there and will be bringing some green sauce from a local mexican food restuarant but with my mom, sister, cousin, and sister's boyfriend coming we feel we should bring more than just the green sauce. My trouble is I will have little to no prepare time immediately before the party so I need something that can be made BEFORE the babyshower and just grab and go once the shower is over. I've been looking through 7 layer dip recipes but they are all so different and not sure which is good and can also stand being outside because this is a pool party, etc... Any of you have any ideas or recipes for a good mexican dip?
Buy some boxes of Mexican rice, prepare them, then top with shredded cheese, sliced jalopeno peppers and black olives. When I make 7 -layer dip I use refried beans, sour cream mixed with taco seasoning, shredded cheese, shredded lettuce, sliced jalopeno peppers, black olives, chopped tomatoes, salsa and sometimes store bought guacamole. I layer first with the items that need spreading, very well-drained tomatoes, then top with the other ingredients. I never do it the same way twice but the dish is always empty. Bring along chips for dipping, too. Have fun!
YOu know you could bring queso in a crockpot. Just throw some pace and some velvetta in your crock and let it sit during the party. Just bring an extention cord. this way you can have the green sauce and chips you planned on bringing and just a little more. If you want even simpler, bring several types of chips (some blue corn, some regular), bring green sauce, red sauce and a bean dip. I love the black bean salsa stuff. You drain 2 cans black beans, 1 can of sweet corn. Mix together with some tomato if you want to risk it..LOL. 1 onion about 1/2 cup chopped cilantro, sqeeze a lime on top and add osme garlic (like a crushed clove), a little salt, mix together and put in the fridge over night.

You can always make spanish rice and transfer it to a crock pot to keep it warm. I have a 7 layer dip that everyone always begs me to make. I mix one packet of taco seasoning with a can of refried beans and spread it on the bottom layer of a platter. I then mix sour cream and cream cheese together in a bowl and layer that on top of the beans. Layer of salsa. Layer of guacamole. Then any veggies you want (tomato, lettuce, onion etc...). Top that with cheddar cheese and garnish with black olives.
This recipe is very similar to Kaye's and it is sooo good! We had it the other night with grilled shrimp. Yummy! And, you can make it ahead of time and just keep it in the fridge. 1 lime- need 2 TBS. juice, 1/4 tsp. zest 2 cans black beans, rinsed and drained 2 plum tomatoes, chopped 2 green onions, thinly sliced 1 small yellow pepper, seeded and chopped 1 jalapeño chile, seeded and finely chopped 1/2 cup cilantro leaves, chopped 1 tablespoon olive oil 3/4 teaspoon salt Mix all together!

FIVE LAYERED MEXICAN DIP 1 16 oz. can refried beans 1 (6 oz.) pkg. frozen guacamole or one ripe avocado peeled, seeded and mashed with 1 tsp. lemon juice added ¼ c. green onion (chopped) ¼ c. black olives (chopped) 2 cloves of fresh garlic (chopped) 2 medium fresh tomatoes chopped chopped jalapeno peppers to taste 1 pkg. dry taco mix 1 c. dairy no-fat sour cream ½ c. mayonnaise 12 oz. cheddar or Monterey jack cheese, shredded Thaw guacamole, or mash avocado. Mix tomatoes, olives, onions, garlic and peppers in a small bowl. Mix sour cream, mayonnaise and taco mix in a small bowl. Layer by spreading in a 9" x 13" glass baking dish. 1. Refried beans 2. Guacamole 3. Sour cream mixture 4. Chopped tomato mixture 5. Top with shredded cheese. Decorate with pieces of jalapeno on top of cheese. Serve with corn chips to dip.
