Candied pork chops, baked mac and cheese and roasted brussel sprouts. Baseball season is about to start and that means we'll be doing sandwiches and easy dinners for the next four months.

BBQ ribs in the crockpot. They've been slow cooking all day. Plus, broccoli and cheese, and some baked potatoes.

My DH got a great deal on prime rib, so that's what we are having, with a baked potato and asparagus!!! Good Husband!!!

Dora... My DH is, as we speak, searching cookbooks for BBQ, slow cooked ribs... and now he's hovering, wanting to know how you do yours! :)

I throw my ribs in the crockpot with a bottle of bbq sauce! Towards the end of cooking them all day, I drain most of that off and put a new bottle of sauce over them and let them cook a bit longer. Then enjoy!

Emily and I were both going to have ham-and-cheese omelets, but we ended up only having 3 eggs. So, I let her have the 2 eggs for her omelet and I poached mine, toasted some whole-wheat bread, took my ham and cheese and warmed it up in the microwave for 15 seconds and made sort of an Egg McMuffin sandwich! It was delicious! (Didn't have Canadian bacon or English muffins!)

Last night, I made some homemade chunky applesauce to go with "breakfast for supper." I warmed that up, too.

Since Sarah doesn't live here anymore, Emily and I are more free to have breakfast for dinner. Sarah doesn't really like breakfast food for supper.

Emily still had her omelet. She is a really good egg-cooker.

I made a baked chicken, a brocolli pie, mashed potatoes, corn, stuffing and cranberry sauce. Dh is wicked sick, so I am going to try to find a good recipe for a spicy chicken soup today.

I put thawed country pork ribs with the bone in the crockpot with about 1 - 1 1/2 inches of water or so. I then season them. No BBQ yet. I let them cook on low for about 7 hours. I put them in around 8 a.m. When DH gets home from work at 3:30 or 4, he puts the BBQ sauce on (we use Jack Daniels or Famous Dave's) and we cook them on low for about another 2 - 3 hours or so. If there is alot of juice, he drains it down to about an inch and then does the sauce. The key is the slow cooking. Makes them tender and then use ample BBQ sauce to really let it soak in. It might take a time or two to really get it down to a science.

We do ribs a bit differently. We put dry rub and sauce on the ribs and wrap them in 4 layers of foil. We cook them on the grill for 1 hour and 20 minutes, we turn the ribs over every 20 minutes. The meat literally falls off of the bone. They are almost steamed by being wrapped in the foil. Delicious.

I should have said that the grill is on low heat. Otherwise they would cook way too quickly!
We lived in Memphis for a while so we are addicted to Rendevous rib sauce. My DH goes to Memphis once a year and stocks up on it while he's there, he can just buy it at WalMart. It's pretty funny because he packs it in his suitcase in ziploc bags. Last time I think he brought home 6 bottles of the sauce and 6 of the dry rub. It would be funny for the airport to check his bag!

Last night i had leftover cheese stuffed shells and the kids had Mac N' Cheese....it was karate night and dh went out to dinner with his boss (bonus and raise time!)

Tonight I have some chicken tenderloins thawing and have no clue what to do with them. We got probably 5 inches of snow last night, so I really don't feeling like going out to the store, i'm going to have to make do with what I happen to have in the pantry.

off to search some online recipes!

We had the French's Fried Onion's crunchy chicken recipe for dinner, that is so darn good!! My dil made it once since she's been here and we made it again tonight, the recipe is right on the back of the can. Also potato cakes and corn. It was delicious!!
