Looking for simple Peanut Butter cookie recipe.....

Moms View Message Board: General Discussion: Archive October 2004: Looking for simple Peanut Butter cookie recipe.....
By Dana on Monday, October 25, 2004 - 01:39 pm:

I lost my favorite recipe and looking for another.

My old one used very few ingredients which I ALWAYS had in the pantry. Can anyone help? TIA

I've made a post in the recipe area to post to, so it stays in the proper place rather than "general".

This is the recipe I use.

1 C sugar
1 egg
1 C peanut butter
1/2 tsp. vanilla

Mix all together. Roll into small balls and put on cookie sheet. Flatten with a fork. Bake until light brown at 350.

This has a few more ingredients but they are all items I have in my pantry and these are the best ones I've ever made.

1 -1/4 cups firmly packed light brown sugar
3/4 cup Jif Creamy Peanut Butter
1/2 cup CRISCO all-vegetable shortening or 1/2 CRISCO Stick
3 tablespoons milk
1 tablespoon vanilla extract
1 egg
1-3/4 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon salt

Heat oven to 375ºF. Place sheets of foil on countertop for cooling cookies.
Combine brown sugar, peanut butter, Crisco Shortening or Crisco Stick, milk and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Add egg. Beat just until blended.
Combine flour, baking soda and salt. Add to creamed mixture at low speed. Mix just until blended.
Drop by rounded measuring tablespoonsful of dough 2 inches apart onto greased baking sheet. Flatten slightly in crisscross pattern with tines of fork.
Bake one baking sheet at a time at 375ºF for 7 to 8 minutes, or until set and just beginning to brown. DO NOT OVERBAKE. Cool 2 minutes on baking sheet. Remove cookies to foil to cool completely.

I will also make these and put an unwrapped Hershey's Kiss on top as soon as they come out of the oven. Hope you enjoy!

Thaw cookie dough, drop by spoonfuls on a pan and bake! Oh, can you tell we have been doing fundraising at our house? We have peanut butter cookie dough, snickerdoodle cookie dough and triple chocolate chunk! LOL!

Emma Lou's cookie dough makes great cookies, though!

Wow, Nikki! That recipe's so simple. No flour? I'll have to try that. I'm always looking for simple, quick and yummy snacks for the kids! :)

Yeah, I know. It's really easy. No, no flour! The cookies are really good too!

Thanks for sharing your recipes. I've never heard of the ones without flour. Amazing. After Kolbysmom and My2cuties post, looks like I'll be giving those a whirl today. I still can't imagine them without flour. How many cookies to you get from a batch?

By Kolbysmom on Tuesday, October 26, 2004 - 10:22 am:

It makes around 12 depending on the size of the cookies.
