What are you having for dinner? I have chicken defrosting right now. Any good, healthy ideas? TIA!
We are having chicken too! On the BBQ with Baked potatoes and fresh carrots.
I have a pork roast in the crockpot, but that doesn't help you with your chicken much, does it? LOL This is my kids favorite. You can either do it in the crock pot or in the oven. Put your chicken in the bottom of a pan, pour a can of black beans on top and then a can of rotel tomatoes. Bake covered at 350 for about an hour or cook in crockpot. You can shredd the chicken and serve in a salad or whole wheat tortillas. My family also loves stir fry.
That's what I have defrosting too. DH cuts it down the middle and fills it with garlic. He also puts Greek seasoning on it. Then he grills it. Very good.
mmm Rayanne that sounds yummy. Too bad it is freaking FREEZING outside so we can't grill. Can you tell how sick I am of the cold weather?? I can't wait till it is nice out and we can gril all the time! Thanks...keep em coming!
The kids are having a whole wheat, spinach and pesto lasagna - very quick and easy if anyone wants the recipe. The kids love it (big surprise!) My dad invited dh and I out to the opening of a new restaurant called "the kiwi grille". It's New Zealand food, so I have no idea what to expect.
We're having pork chops. Do you have any Italian dressing? Put the chicken in a baking dish and cover it with Italian dressing (takes about 1/2 a bottle) and bake for about an hour or until the chicken is done. It's really good!
I'm letting dh cook tonight! That's a joke Roasted chicken, mp, corn.
Colette, I would love the recipe! Sounds very good. I love pesto! I have no idea what we are having! I have not cooked in what seems like forever. Hmmm...takeout maybe. My poor DH! LOL!
Cat that sounds good and easy. Maybe i will try that. My dh's 100% Italian, of course we have Italian dressing in the house LOL!
We are having chicken parmesan with speghetti. Yum!!

I am making Chicken and Rice. Boil the chicken with some celery (I always add a little chicken boulin too)remove the chicken after it has cooked then add about half the amount of rice that there is broth, cover and let cook. Break your chicken apart and add to rice (should have absorbed all the water), salt, pepper, a can of cream of mushroom or chicken whatever you have, and 8oz of sour cream. Viola! Everybody loves it here.
I posted it last march on the recipe board if anyone is interested. I don't use the tofu anymore, but I still use the whole wheat noodles. For sauce I use Newmans, I think it's called bombolina, it's the basil sauce, very yummy, all natural.
I just got home from grocery shopping for our Easter dinner, so we are having a very quick meal tonight. Three Cheese Hamburger Helper and some Pillsbury Biscuits.
We are going to have Chicken Fajitas.

Well, DH did some computer work for someone and actually got paid in cash instead of Diet Coke or beer, so the kids and I are going out. We ate veggie soup that last two nights, though.
Little late to be posting but I had rice with my DD because dh works at night and it is just me and her I dont cook big meals on the weekdays, on the weekends I cook for him!
Cat, i did your suggestion of pouring Italian Dressing over the chicken and baking it. That is so easy and obvious, why did'n t i think of that LOL! IT was really tasty too!
Italian dressing is a great marinade for seafood too.
Glad you liked it, Patti. You can also put apricot jam on chicken like a glaze and bake it. Yummy!
