I Need A Cheesecake Recipe, Please!

My dh LOVES cheesecake. It is his favorite dessert of all time. I make him a baked cheesecake for Valentines Day every year, but I always make the same recipe and I'd like to try a new recipe this year so if anyone has a tried and true cheesecake recipe I'd love to hear it. Sorry about posting this here, but the recipe board doesn't seem to get much traffic and Valentine's Day is just around the corner. Yikes! TIA!:)

Here is THE BEST Cheesecake recipe! The person who gave it to me was quite vague on the exact measurements, but if i can do you, you can do it!

3 pkg (8 oz.) cream cheese
1 C sugar
4 eggs
vanilla
1 pkg graham crackers
1/4 cup milk
Sour Cream

3 pkg of cream cheese, add part of one cup sugar, beat together 4 eggs, only adding a couple at a time, one pour of vanilla, the rest of eggs, little more sugar, scraping the bowl every now and then. Add rest of sugar. Beat the heck out of it..have a cup of coffee if there is one :)

Crust -9X13 pan
Use pkg of graham crackers, 1/4 cup melted butter, 1/3 cup sugar. Mash it into crumbs. Line bottom of pan, pour in cheese mix. Put in low rack of oven 325 degrees for 45 minutes.

Take out and mix together 1 16 oz. thing of sour cream, one pour of vanilla, 3 Table spoons of sugar, mix it up and throw on top of cake, spread even and bake another 5 minutes.

For springform pan 350 degrees for 1 hour, 5 minute topping.

I have that exact recipe as posted above and it really is the BEST! I was going to post it! LOL.

If you're looking for something a little different...I have a good chocolate cheesecake recipe that is AMAZING!! I couldn't believe that I made something that tasted so good!

Crust:
1 1/2 cups chocolate graham crackers
2 tbsp sugar
1/4 c butter, melted

Mix crushed graham crackers, sugar and melted butter. Press into greaed springform pan. Bake at 350 degrees F for 10 minutes. Reduce oven temp to 325.

Filling:
1/4 cup semisweet choc chips
1/4 cup heavy whipping cream
3 packages of cream cheese
1 cup of sugar
1/3 cup unsweetened cocoa powder
3 eggs
1 tsp vanilla

Heat 1/4 whipping creak and 1/4 cup choc chips. Stir constantly until melted. Set aside.
Beat cheese and 1 cup of sugar until smooth.
Add cocoa and beat well
Add eggs one at a time on low until blended
Add vanilla and chocolate mixture from above.
Pour into crust and bake at 325F for 45-50 minutes.

Topping:
1 1/2 cup semisweet choc chips
1/4 cup heavy whipping cream
1 tsp vanilla

Heat 1/4 cup whipping cream and 1 tsp vanilla until just before boiling. Stir constantly. Pout 1 1/2 cups of choc chips and stir until smooth. Spread over the baked cake and refrigerate overnight.

Those recipes sound great and since you both have tried and liked the first one I am going to give it a try. Do you think it would be ok to serve it with strawberry glaze to give it a little color for a "Valentine" look even though it has a topping? I have never made a cheesecake with a topping before, so I'm not sure if the strawberries would make it soggy or not. I'm glad to see it can be made in a springform pan since I have a heart-shaped springform pan I like to use for the Valentine cheesecakes. I have never made a flavored cheesecake, but the chocolate one sounds really good too. I am going to save the chocolate version to try for his birthday. Thank you so much Patti and Kelly!!! I'm on the way to the store to buy the ingredients this afternoon!:)

Easy Strawberry Cheesecake

1 ½ cups graham wafer crumbs
¾ cup coconut
2/3 cup melted butter or margarine
20 oz frozen strawberries, thawed and pureed
3 - 8 oz packages cream cheese
1 cup sugar
½ cup orange juice
1 tablespoon lemon juice
2 envelops gelatin
½ cup cold water
1 cup whipping cream, whipped


Combine first three ingredients and press into the bottom of a springform pan. Beat cheese, sugar and juices until very smooth. Beat in pureed berries. Sprinkle gelatin over cold water in saucepan and let stand five minutes to soften. Stir over low heat until dissolved. Beat gelatin into cheese mixture. Refrigerate until mixture begins to set. Fold in cream. Pour into springform pan and chill overnight.

Optional topping -
1 cup whipping cream
¼ cup powdered sugar


Beat together until stiff and spread on top of cake. Decorate with fresh strawberries.

EASY INDIVIDUAL CHEESECAKES

14 vanilla wafers
4 (3 oz.) pkgs. cream cheese, softened
2/3 c. sugar
2 eggs
1 tsp. vanilla extract
3/4 c. commercial sour cream
1/4 c. sugar
1 can strawberry canned pie filling


Line muffin pans with paper liners. Place a vanilla wafer in each cup. Set pans aside. Beat cream cheese with electric mixer until light and fluffy; gradually add 2/3 cup sugar and mix well. Add eggs and vanilla, beating well.

Spoon mixture into liners filling 2/3 full. Bake at 350 degrees for 10 minutes. Cool.

My Absolute Favorite: Light and moist.

NEW YORK STYLE CHEESECAKE

2 (8 oz.) pkgs. cream cheese, softened
1 lb. creamed cottage cheese
1 1/2 c. sugar
4 eggs, slightly beaten
3 tbsp. cornstarch
3 tbsp. flour
1 1/2 tbsp. lemon juice
1 tsp. vanilla
1 tsp. grated lemon rind
1/2 c. butter, melted
1 pt. sour cream


Preheat oven to 325° degrees. Grease a 9 inch spring form pan. With electric mixer, beat the cream cheese with cottage cheese at high speed until well combined. Gradually beat in sugar, then eggs. At low speed, beat in cornstarch, flour, lemon juice, rind and vanilla. Add melted butter and sour cream. Beat just until smooth. Pour into the greased pan and bake one hour and 10 minutes, or until firm around the edges. Turn off oven and let the pan stand in the oven for 2 hours. Then remove and let it cool completely. This takes at least 2 hours. Refrigerate the cake for three hours or until well chilled. To remove from pan, first run a spatula around side and then release clasp. Leave bottom of pan in place and put on serving plate. Can garnish with any fruit pie filling, cherry, blueberry or strawberry. Freezes well.

My dh and I are hosting a 75th birthday party for my dad, and one of the items I am making for the dessert table are the individual cheesecakes. It's such a good and easy recipe. I usually put a raspberry puree (with a little grand marnier) on top rather than the pie filling.

Caramel Swirl-and-Apple Cheesecake
(Cooking Light, but DELICIOUS!)

So that the yogurt has ample time to drain and become yogurt cheese, start this cheesecake a day ahead.

1 (32-ounce) carton vanilla low-fat yogurt
1/4 cup sugar
1 T. stick margarine, softened
1 egg white
1 1/4 cups graham cracker crumbs (about 40 crackers)
1 t. cinnamon
Vegetable cooking spray
1/4 cup firmly packed brown sugar
1/4 cup orange juice
3 cups cubed peeled Golden Delicious apple (about 1 1/4 pounds)
1/2 cup sugar
3 T. cornstarch
1 T. vanilla extract
1/4 tsp salt
1 (8-ounce) block Neufchatel cheese, softened
1 (8ounce) block nonfat cream cheese, softened
2 eggs
1/3 cup fat-free caramel-flavored sundae syrup
2 T. fat-free caramel-flavored sundae syrup
Cinnamon sticks (optional)


Place colander in a 2-quart glass measure or bowl. Line colander with 4 layers of cheesecloth, allowing cheesecloth to extend over edge of bowl. Spoon yogurt into colander. Cover loosely with plastic wrap; refrigerate 12 hours. Spoon yogurt cheese into a bowl; discard liquid. Cover and refrigerate.

Preheat oven to 350 degrees. Combine 1/4 cup sugar, margarine, and egg white in a bowl; beat at medium speed of a mixer until blended. Add crumbs and cinnamon; stir well. Firmly press mixture into bottom and 1 1/2 inches up sides of a 9-inch springform pan coated with cooking spray. Bake at 350 degrees for 10 minutes; let cool on a wire rack.

Preheat oven to 300 degrees. Combine brown sugar and orange juice in a large nonstick skillet; bring to a boil. Add apple; cook 8 minutes until apple is tender and liquid evaporates, stirring occasionally. Set aside. Combine yogurt cheese, 1/2 cup sugar, and next 5 ingredients (1/2 cup sugar through nonfat cream cheese) into a bowl; beat at medium speed of a mixer until smooth. Add eggs, 1 at a time, beating well after each addition.

Spoon apple mixture into prepared pan. Pour cheese mixture over apples; top with 1/3 cup sundae syrup, and swirl with a knife to create a marbled effect. Bake at 300 degrees for 1 hour until almost set. Turn oven off; loosen cake from sides of pan using a narrow metal spatula or a knife. Let cheesecake stand for 40 minutes in oven with door closed. Remove cheesecake from oven, and let cool to room temperature. Cover and chill at least 8 hours. Drizzle remaining sundae syrup over top; garnish with cinnamon sticks, if desired. Yield: 12 servings (serving size: 1 wedge).

Oh my, all of these sound so good! I just got back from the store and I bought everything to make the first cheesecake on this thread, but I am definitely writing down the others to try another time. I have made individual cheesecakes for my dk's classes before and they are wonderful! Thanks ladies for all the yummy sounding cheesecake recipes!
