Better Homes and Garden New Dieters cookbook: I bought it about 3 weeks ago. Didn't want to post until I really had a chance to use it.

IT IS WONDERFUL!!!!

My entire family (DH, mom and myself) are all wanting to drop some pounds but still eat well. I am following a plan of 1500 cal for mom and I and 2000 for DH.

I am using the cookbook for almost all my meals. I am spending HOURS upon hours in the kitchen cooking and cleaning and planning. But I must say, none of us, even my DH, are wanting for anything. The food in fantastic. You still get to eat butter and milk and even desserts. Lots of yummy treats in the book. Incredible entrees and some very tasty veggie dishes.

The hard part is planning the meals for the day and having enough time to prepare them. It is real cooking. Nothing like a "5 minute menu" But for taste, it is top notch.

I bought it at Sams club. It has photos for all recipes. Categories are:
*Slimmed-downed favorites (includes Mashed Potatoes, dumplings, green bean caserole to name a few)
*Entertaining Light (fancy looking dishes)
*Low Calorie Holidays (appetizers, breads, desserts, main dishes, side dishes)
*Quick Weekday Meals

Sounds great. Could you give me a sample recipe from the "Quick Weekday Meals" chapter?
I love to cook. Any ideas to serve healthy meals are always appreciated. :)

Heres what we had tonight.

Servings: 4
Yield: 4 servings
Start to finish: 30 minutes

Categories: chicken, dinner

Source: BH&G New Dieters cookbook

1/4 cup feta cheese
2 tablespoons fat-free cream cheese
1 1/4 pounds skinless boneless chicken breast, about 4 ea
1/4 teaspoon black pepper
dash salt
1 teaspoon olive oil
1/4 cup low sodium chicken broth
10 ounces spinach leaves
2 tablespoons walnut, toasted
1 tablespoon lemon juice

In a small bowl, combine feta cheese and cream cheese; set aside. Using a sharp knife, cut a horizontal slit through the thickest portion of each chicken breast half to form a pocket. Stuff pockets with the cheese mixture. If necessary, secure openings with wooden toothpicks. Sprinkle chicken w/ pepper and salt to taste.

In a large nonstick skillet cook chicken in hot oil over medium-high heat about 12 minutes or until no longer pink, turning once (reduce heat to medium if chicken browns too quickly). Remove chicken from skillet. Cover and keep warm.


Instead of using fresh spinach, I used my 10 oz frozen boxed. I simply defrosted and squeezed dry. Then I put it all in the skillet at one time.

Also, I realized too late that I only had one chicken breast. So I cut it in half. And I also had one preboiled breast that I had made for "future use". It worked fine, but not as juicy. That one was also cut in half.

Nevermind...I missed the spinach in the skillet part.
