What does 'flash frozen' mean?

It's in reference to salmon on a Market Day order. I've heard the term but don't know what it means!

Also, if you've ordered fish from Market Day before, how does it come if it doesn't state that it's 'flash frozen'? I've never bought anything but fresh fish. TIA:)

My husband is a butcher for Costco. He said a flash freezer is extra cold, and can freeze things within a few minutes.

I also heard that this means that thawing before cooking is unnecessary. But I am not sure why.

When things are flash frozen it means they are frozen quickly, but individually. So you can pull one salmon filet out at time. As opposed to regular freezing, they would all attach to each other and you would have to thaw a whole package.

With fish, it means they are frozen quickly on the boat that catches them.
