Favorite meals

What are some of your favorite meals, especially easy ones you can make in advance or after work? I'm trying to expand my recipes, and being a working mom with kids in school is making dinner time more difficult than ever!! Some of the recipes I plan to make over the next two weeks:

Cheddar Broccoli soup
Southwestern Corn Chowder
Sheperds Pie
Grilled fish (I'm picking some up tonight, not sure what kind)
BBQ Grilled Chicken (we've been making snack wraps with BBQ chicken leftovers)
Chicken and rice

Here are a few of our family favorites:
Chicken Enchiladas
Lasagna
Grilled chicken breasts (with Newman's Own Balsamic Vinegar Marinade)
Baked chicken fingers with mango dipping sauce
Cajun chicken
Grilled steak with garlic herb sauce
Homemade Mac-N-Cheese
Brown rice with onions, mushrooms, and sliced steak (leftovers)

Kidding...kind of...anyways, dh does the cooking usually for him and I. Some favorites are jerk pork w/grilled pineapple and rice and beans, morrocan olive chicken - really one of my most favorite things that he makes, any kind of stir fry - you can do all the prep work earlier and then toss it all in a wok or large frying pan, any kind of grilled fish with a fruit salsa. Can't think of anything else off the top of my head, but I would think grilling would be the easiest and it's quick too, especially if you do the prep work ahead of time.

on the really crazy days, get take out.

Tator Tot Hot Dish (or Casserole)
Chicken pot pie
Homemade Pizza on the grill
Cold pasta salad with tuna, olives cheese, peas and mayo dressing
Taco salad-both hot and cold
Enchilladas-I make these ahead

Boy, I'm getting hungry.

*Just about anything Italian or Mexican
*Salads - We LOVE salads - I do variations, sometimes with as many as 5 different kinds of lettuce, and sometimes with other vegies or grilled meat, and almost always with some sort of cheese and nuts, except if we do a *taco salad*, or a *fajita type* salad. When we do those, I mix salsa and sour cream for the dressing.
*Grilled chicken breasts and grilled red bell peppers or corn or zuchinni - the grilled vegies are to die for!

Baked chicken fingers with mango dipping sauce
4 fresh boneless, skinless chicken breasts
1 teaspoon curry powder
1 teaspoon ground cumin
1/2 teaspoon ground ginger
1/4 teaspoon cayenne pepper
1/4 teaspoon ground black pepper
1 recipe Dipping Sauce:
1/2 cup water
1/2 cup sugar
1 mango peeled* and chopped
1/2 cup white wine vinegar


Directions


Preheat oven to 350°F.

Slice chicken breasts into strips; set aside.

In a plastic bag, combine curry powder, cumin, ginger, cayenne pepper and black pepper. Shake to mix. Place chicken in bag and shake well to coat. Remove chicken from bag and place on a foil-lined baking sheet. Place in oven and bake for 10 to 12 minutes, or until chicken is no longer pink inside (see cooking tip).

To make mango dipping sauce: Stir water and sugar together in a small skillet. Heat over low heat until sugar dissolves. Add mango and increase heat to medium-high. Slowly bring mixture to a boil. Remove from heat; let cool to room temperature. In a blender, combine mango mixture and vinegar and blend until smooth.

Serve chicken pieces with sauce for dipping.
