Healthy snack/dinner ideas?

I've recently discovered the "steam in a bag" veggies that you can just put in the microwave and I *love them*! :)

For snacks, I've loved Greek yogurt with splenda brown sugar.

Anyone have a good snack or dinner idea that's healthy?

Here's one I do as a dessert:

Cut up fresh fruit, I usually use

Apples
Grapes
Bananas
Oranges
Blueberries
Pineapple
Strawberries

Put into individual bowls and top with Balkan Style Plain Yogurt - it's a bit thicker than regular yogurt. Your Greek yogurt would probably work or you could use Vanilla yogurt.

Top the yogurt with a little bit of granola and drizzle a little bit of liquid honey. If you use Vanilla yogurt omit the honey as it will be sweet enough.

This is so delicious, low fat and healthy! Hope you try it!

My kids like most kids, love French Fries.

Here's my recipe:

4 lrg. potatoes (2lbs)
8 cups ice water
1 tsp garlic powder
1 tsp onion powder
1/4 tsp salt (I use ground sea salt)
1 tsp white pepper
1/4 tsp all spice
1 tsp hot pepper flakes
1 Tbsp vegetable oil

Scrub potatoes and cut into 1/2 inch strips.
Place potatoes into ice water, cover, and child for 1 hour or longer.
Remove potatoes and dry thoroughly.
Place garlic pwd, onion pwd, salt, white pepper, allspice and pepper flakes in a plastic bag.
Toss potatoes in spice mixture.
Brush potatoes with oil.
Place potatoes in a nonstick shallow baking pan.
Cover with aluminum foil and place in 475 F oven for 15 mins.
Remove foil and continue baking uncovered for an additional 15 to 20 minutes or until golden brown
Turn fries occasionally to brown on all sides

Serves 5 - serving size 1 cup

Fat 4g
Saturated fat 1g
Cholesterol 0mg
Sodium 163mg

I omit the pepper, allspice and pepper flakes as my kids would not like the stronger spices. I just use salt and garlic and onion powder. We never have left-overs. :)

I also have soaked the potatoes and not soaked and don't notice a difference so you can skip that step.

I have a turkey chili recipe to die for, let me know if you want and I'll post on the recipe board.

Here's one my kids love.

Light Cream Cheese on Graham Crackers.

You can add canned mandarin oranges, bananas, fresh raspberries, blueberries, strawberries etc.

Very yummy but addictive, it's hard to just eat one.

Heidi- I discovered the Steam Fresh bags about a year ago and it's all I EVER buy now! Love them!

As far as snacks go, I seem to be enjoying frozen grapes lately. It's like a healthy frozen treat and I think they taste a bit sweeter than normal when they are frozen and just barely start to thaw. Yum!

My kids love "ANTS ON A LOG" Celery with peanutbutter in the well and raisins (ants) on top. Very yummy.
