In need of a potluck idea...
I have to bring a non-dessert dish or item to a potluck. I don't want anything complicated! Does anyone have any ideas of something simple that doesn't need an oven? Thanks.

Thanks, Trina. Someone is bringing finger sandwiches and I brought a cheese platter last time and it didn't really get eaten. And surprisingly the fruit doesn't go either. Last time the big hit was a spinach salad with dried cranberries. Everyone goes for the different dishes. I'm amazed at all of the soups and such they make. I just don't have time for that! LOL
I make this turkey salad that goes over real well at potlucks. egg noodles (cooked) diced turkey (fat slices from deli cut up) broccoli florets (fresh) shredded cheddar ranch dressing Just mix it all up in a bowl and add dressing until the consistency that you like. I really don't measure anything and the only thing you need to cook are the noodles. Very easy especially with a new baby (who is adorable by the way).
What about humous and bread for dipping it in? I don't know what goes over well with your friends but in my circle of friends that is ALWAYS a hit!
What about a cheese ball? 2 pkgs Cream Cheese 1-2 small cans chopped green Chiles 2 green onions 1 pkg. Budding Ham (or other brand really thin sliced) shredded cheese Garlic Salt (if use onion salt) Onion Powder (if use garlic salt) I serve with wheat thins and sometimes trisquits. If you are using garlic salt only use onion powder or it could be too salty. Same if you are using Onion Salt only use Garlic powder.
What about a fruit salad. I have a Honey-Lime Fruit Toss that is a weight watchers recipe my sister gave me. It is really yummy and very easy. Black Bean dip is good. Thats all I can think of I am really tired. lol Been running around nonstop today. Have fun!

Mexican Chicken Recipe courtesy Paula Deen Recipe Summary Difficulty: Easy Prep Time: 10 minutes Cook Time: 30 minutes Yield: 8 servings User Rating: Vegetable oil cooking spray 1 (10 3/4-ounce) can cream of chicken soup 1 (10 3/4-ounce) can cheddar cheese soup 1 (10 3/4-ounce) can cream of mushroom soup 1 (10-ounce) can tomatoes 1 whole chicken, cooked, boned, and chopped or 4 cups leftover cooked chicken Unsalted butter, for greasing pan 1 (11 1/2-ounce) package flour tortillas 2 cups shredded Cheddar Preheat the oven to 350 degrees F. Spray a 13 by-9-inch pan with the cooking spray. In a large bowl, stir together the 3 kinds of soup and the tomatoes. Stir in the chicken. Super easy and always gets raves! I love it and I don't even like cabbage. 2 (3 oz.) pkg. oriental noodles with oriental flavor (ramen noodles) 1 bag coleslaw 4 green onions, sliced (1/4 c.) 2 tbsp. sesame seed 3 tbsp. vinegar 2 tbsp. sugar 2 tbsp. salad oil 1/2 tsp. pepper 1/4 tsp. salt 1/2 c. slivered almonds 1/4 sunflower kernals Break apart dry noodles into pieces. In a large mixing bowl, combine noodles, cabbage, onions and sesame seed. For dressing, in a screw top jar, combine seasoning packet from noodles, vinegar, sugar, oil, pepper and salt. Shake to mix well. Pour over cabbage mixture just before serving and toss with almonds and sunflower seeds.

Lemony Orzo Salad from Cooking Light 1 cup uncooked orzo (rice-shaped pasta) 1 1/3 cups diced zucchini 1/3 cup diced red onion 1/3 cup minced fresh parsley 3 tablespoons fresh lemon juice 1 tablespoon minced fresh or 1 teaspoon dried basil 1 tablespoon olive oil 2 teaspoons minced fresh mint 1/2 teaspoon salt 1/4 teaspoon black pepper 1 cup diced tomato 1/3 cup (1 1/2 ounces) crumbled feta cheese 2 tablespoons chopped pitted kalamata olives Cook orzo according to package directions, omitting salt and fat. Drain well. Combine orzo, zucchini, and onion in a large bowl; toss well. Combine parsley and next 6 ingredients (parsley through pepper); stir well with a whisk. Stir into orzo mixture; add tomato, cheese, and olives, tossing gently to coat. I think someone brings that ramen noodle salad to every potluck I have ever been to! LOL! It's a popular item!
Pam, I think I'll give that a try! I've heard people talk about it, but I've never tried it. Thank you! I have a few good recipes that everyone always likes, but they are more work than I want right now. LOL I have a yummy artichoke rice salad that I get requests for. I think I may have posted it on the recipe board. That can be made the night before. It's a good one if you are looking for something new. Thanks, everyone!
I never could cook. But when I was on Guam and we had to bring a dish for the Company Party, I brought a Baked Bean dish. Everyone loved it! I was so surprised!! Not one bite was left.
Eve, the artichoke rice salad sounds yummy. I'm going to give that a try soon.
