Dinner?
Do you ever stand in your kitchen and just scratch your head or your butt and go hmmmmmm.... Geeez oh criminy I cannot for the life of me think of anything to fix. I feel like giving everyone a box of Girl Scout Cookies and a glass of milk. lol What did everyone else have for dinner?
I did that today! So, we just finished having pb&j and chips. We rarely do that. Usually it's a full meal. So, the kids thought it was fun
Not really because I plan a whole week's menu before I go grocery shopping every Friday. Wanna throw tomatoes at me? Wednesday nights are always scrounge night around here because of church. Kids are having chicken nuggets and DH and I are having Cajun Chicken Salad. DH has gotten BIG into photography and has started taking pictures of most of our meals---drives me crazy. Anyway, here's dinner last night
Oh yes, I know the feeling! Just yesterday, in fact. I looked in my cupboards and whipped up a new dish - whole wheat macaroni with hamburg and alfredo sauce. It wasn't too bad. Tonight we had pork chops (cooked in the microwave with lemon pepper seasoning) and steamed carrots. Who knows what we'll have tomorrow night?! Hmmm, I could put something in the crockpot in the morning...
Yep, just cleaned out the fridge and thought "Darn, I need to go grocery shopping!". We're having burritos and a green salad. I have all the fixin's for that and the spinach will go bad if I don't use it in the next day or two. So, Conni, which do *you* scratch???
Trina, how on earth can you cook meat in the microwave? It's so white, bland, and icky-looking....or do you know a secret and want to share?
Oh I SOOOOO had that feeling today!!! To make matters worse, it's sometimes difficult simply because my DH was never fed fruit or vegetables as a child and eats little to NONE of them. Makes meal planning a little mundane. If it's not red meat, potatoes, and mac & cheese, he's not sure what to do with it. Me and DD, on the other hand, love veggies so sides are really easy and healthy for us. Literally if I'm out of mac/cheese and potatoes, I have no clue what to feed him. Isn't that ridiculous!!!
And yes Pam, I'm throwing BIG tomatoes at you for being so organized about meals!!!
Deanna, it's the only thing I am organized about. You should see my house at the moment and my stacks of papers and bills that need to be organized.
Deanna, I think we may be married to the same man. Unfortunately, my youngest is realizing that Dad never has veggies or fruit on his plate so why should she??? It doesn't help that I refuse to cook a separate meal for anyone so I can't make a casserole or soup that has anything he doesn't like in it either. Pam, this is for you!
I also plan out my meals for the week before I go shopping, otherwise I waste too much food! We had tilapia, rice, and broccoli tonight. I made a commitment last year to eat more "real" foods...not much comes frozen or from a box anymore. Real food tastes so much better!!

MMMMMMMMM Sounds yummy to me, Colette! LOL Conni, I do that in my kitchen EVERY night. I hate to cook, at least during the work week. Pam, LOVE your dishes!!!!
Oh Colette, that sounds great! Although not every week, our Take Out night is Friday. Pam, I often cook meat in the microwave in a covered casserole dish. It only takes about 10 min. for 1 lb. of chicken or pork, and is nice and moist. I play around with seasonings - celery salt and paprika, lemon pepper, parsley, ... Quick and easy! No complaints from my family. LOL! I go in phases. Sometimes I'll plan meals, but usually I shop for the basics and whip stuff up, depending on what I feel like cooking. Works for us.
LOL Pam, I can't quite imagine the pressure of my meals being photographed.
Tink, I thought for sure I was the only one with a hubby like that! Doesn't it make things difficult?? I don't prepare separate meals either, but do make an extra side of veggies for DD and I. DH also has hereditary high cholesterol, so it's not doing anything for his health either!
I almost wish my dh had ANY health issues. The man has lived through a very rough childhood, partying and drug use, several car accidents, is a pack-a-day smoker, and has an awful junk food habit. He is healthy as a horse! He could stand to gain 10 lbs, his BP and all cholesterol levels are perfect, and his lung scans are clear. It drives me nuts that he has no consequences for his bad habits and it worries me that it will all catch up to him in a few years. I do veggies on the side, too and will occasionally pull out his portion before I add the veggies for the rest of us. I know we aren't the only ones with DHs like this but it is certainly frustrating!
OK, last night we had tuna sandwiches and I had 2 boys running from the table screaming noooooooooooooooooooooooooooooooooooooooooooo.... lol They had ham sands instead. Tonight we had breakfast burritos... And my 5yo was spitting it out as soon as he realized it was eggs. LOL He decided he would love to try the left over tuna. My poor kids have been traumatized the last 2 nights. ha I usually go to the store on Thursday but I was at a friends house scrubbing grout most of the day. Tomorrow I have to go grocery shopping!!! Thats funny about your dh's that wont eat veggies or fruit! We love fruit and veggies here. I am kind of in a funk lately and am not into cooking. I did get a new cookbook in the mail so I am going to sit down and find something new and yummy to try this weekend.
Pamt, your dishes are very pretty and that dinner looks beautiful and yummy!
Tonight I made chicken and dumplings in the crockpot. I bought frozen dumplings and kept them in the pot too long so we had chicken stew instead, fresh rolls and salad. Even though I am home most days, with the kids activities in the evenings, I use my crockpot at least once a week, so they can help themselves to a healthy meal. I also like to use whole foods mostly but I do keep boxes of mac/cheese for side dishes. My side veggies are usually a salad and frozen veggies. When spring and summer come along then I buy fresh from roadside stands. Our grocery stores have overpriced bland tasting produce many days.
Rofl, Annie! We had chicken and dumplings in the crockpot here, too. My crockpot has a timer and it shut itself off but the dumplings were still raw so we're eating late tonight. I dumped some carrots, celery and mushrooms in with the chicken so that'll cover all of the food groups. DH can just pick out what he won't eat!
Conni, any time you have Girl Scout cookies and milk for dinner, please call me and I will be right over! That goes double for Mai Tai night at your place, Colette! (Oh, and the Chinese food, too, LOL). Just spaghetti for us tonight. (Definitely no photographs!) Between baseball practice and art class, there was just too much running around for anything more!
We had burgers on the Foreman and Bush beans.
I'm with you Pam! I started menu planning for two weeks at a time about 2 months ago and the difference in our meals and my attitude about them has been great. I can't imagine now how I'd do without it and how in the heck I made grocery lists without knowing what we would eat. Just look at the plan on the fridge and presto! Pizza tonight.
I really am in awe of those of you who plan meals a week or two at a time, and shop accordingly. There's no way I could plan what I'm going to eat 2 days in advance, much less an entire week or two. For one thing, what if you don't feel like eating what you have planned? That would be *my* problem. I guess it wouldn't be a huge issue if I had always done that, but I could never get myself organized enough to even start doing it. Heck, I don't even take a list to the grocery store! LOL
Karen, I am with you. I have been in a cooking funk since dh started working in St. Louis. I have been avoiding these "what's for dinner" threads lately, probably out of guilt! It really hit home last night when I asked the boys what they felt like for dinner. My youngest said, "it is Thursday, isn't that chicken noodle soup and grilled cheese night" LOL, I am sure everyone will be happy when dh is back with us and I actually start cooking again!
My daughter loves to cook. Dinners are a bit more difficult, because most of the time she wants to cook. I try to get her to sit down on the weekend and pick the recipes she wants to do, so I will have correct supplies in the house. She loves cooking difficult meals. We certainly eat better when she makes dinner. LOL. This week she has made: Steak & spinach roll-ups, Chicken parmesan, Shrimp scampi, and Scallops cooked in garlic sauce. Tonight is going to be a roast because we will be working on the floor in the kitchen. We try to use only healthy recipes and have a lot of healthy cookbooks. Hubby isn't great about eating veggies but does eat them. The kids love most fruits and vegetables. We snack a lot on fruit here.
When I am organized I plan two weeks out. I am not great about it. Karen, I post it on the fridge though and ya know if you know what you are going to eat all day I am almost ALWAYs in the mood for it, by time it is ready! The other big plan that I had is that monday night is italian, tuesday is mexican, wed is cassarole or crockpot day. Then it kind of falls apart from there
