We're having breaded fish, mashed potatoes, and broccoli.
I would love some ideas for next week, so what are you having? :)

I'm making my absolute favorite!
Salt and Pepper a pork roast. Brown it in a pan. Take it out, sprinkle a generous amount of rosemary on it, wrap with bacon, (I don't do this very nice, I just lay pieces over it and tuck them underneith) and set in a baking dish. Cram as many broccoli and cauliflower pieces around it as you can, cover and bake at 350 until meat reaches 145 degrees. I usually start checking it at about 45-50 minutes for a 3 lb roast. Let it sit for a couple hours with the lid on and you will have a perfect flavorful roast. That is great for eating plain, and with sandwiches the next day. Plus the veggies will be to die for. (I usually take out the bacon afterwards). Also the juice can be saved and used later for some very good gravy.

Steaks on the grill with mushrooms, roasted zuchinni and crookneck squash, rice pilaf, and my dh's "A-------(our last name) Special", an orange julius thing that the kids gobble down.

Dh is still at work. I think we (him and I) will probably go out. The kids had choices of quesadillas (don't know if I spelled that correctly), vegetarian chili and blue corn and jalepeno corn bread.

Easy dinner tonight - a huge salad with crumbled goat cheese, pine nuts, dried cranberries and fresh blueberries, and steamed broccoli and cauliflower. I know, we're weird..........

Well last night I made my favorite way to eat fish fillets, sautéed spinach with olive oil and garlic, threw that in a baking dish, and put haddock fillets on top of the spinach and finished it off with salt, pepper and lemon slices, my dh and I just love it!! Tonight we had chicken breast baked with crushed tomatoes, carrots, potatoes, and onions, seasoned that up with garlic, oregano, and thyme, a little wine… I over cooked it a bit, so it was dry, but still good :)

The kids are having chicken nuggets and french fries (thank you, Schwans! lol). I baked some chicken breast filets earlier and dh and I are going to have them on salads. We had karate tonight so easy dinners. :)

Tuscan Chicken (last night) Great Crock Pot recipe

4 Frozen Boneless Skinless ck breast
1 jar mild pepperoncinis (whole)
1 can Black or Green Olives
1 Can diced tomotoes
juice from 1/2 lemon
paprika
2 cloves garlic
Add all together cook on high for 30 minutes and low for 3-4 hours (or low for 4-5 hours)

Serve over Cooked Bowtie pasta with crumbled Feta and fresh Basil.
The kids just like the chicken and noodles, the other stuff is left whole so it's easy to pull out if needed. It's also a coloful dish so it's serves nicely to guests.

Cat, my Schwans guy moved, I miss him, I think I'll call and get a new one, thanks for the reminder.

We just had THE absolute worst pork tenderloin I've ever tasted. I just bought it, preseasoned, and we threw it on the grill. It was SO incredibly salty, we couldn't eat more than one bite. Sad to have to toss it in the garbage.... I won't even feed it to Kali, that's how salty it is.

We had easy light dinner since we ate so much last night. Grilled cheese and Chicken Noodle Soup. The kids were actually excited about it?? LOL
