Pot Roast side dishes

I'm making a pot roast in the crock pot for company we're having tonight. Since the roast has the veggies and potatoes already cooking with it I don't know what else to make as a side dish. Rolls, or would that be too much carbs? Any ideas? I don't want the meal to seem too simple by just serving what's in the crock pot.

I would do rolls or bakery bread, and salad or a fruited jello.

I'd throw together a salad, just for the green veggies. I love pot roast and all the sides but I don't feel like I've had something "good for me" until I've had some fresh veggies. Sounds like a good idea for dinner, though! :)

Now why didn't *I* think of a salad??? I know, because that sounds too simple and i'm trying to be complicated, lol. I think a salad with lots of cucumber sounds good. Mmmm....

We usually do mac and cheese with pot roast and make it a real good fattening meal!! :) Rolls, too. I just spoiled my DH with this meal lastnight.

I like buttered noodles with pot roast. Just pour a little gravy from the pot roast over them. yum!

We always have green beans and rice. I love the roast gravy poured over the roast. Soak up as MUCH fat as possible!

Another vote for green beans! I'd add that or salad. But then, I usually add vegies before carbs anyway, especially since I'm such a huge bread lover. I have to balance that out somehow!

I think a salad and some bread, would have worked.

When we have our Christmas Eve lasagna, we have salad and French bread slices, for sides. We really don't need anymore than that!

No one wants the fruited jello? I like that with a big, heavy, warm meal. I like the change with the cold fruitiness vs. the thick, warm stew. I like salads too, and suggested that, too, but in this case I think I like the fruitier cold option over the veggie cold option.

I like jello, too. 2 years in a row, I have brought a red and green jello mold to my SIL's house, for Christmas dinner. Everyone loves it and it looks so festive.

Kate, we love jello salads. :) I like ambrosia myself w/ the mandarin oranges. YUM!!!

We always do green beans or salad (depends on what I have) w/ rolls as well. I am putting a roast in the crock pot this morning. :)

Dawn, we had friends over for dinner Saturday and had your Christmas Eve dinner! I added some shrimp, just because the boys don't like lasagne. :)

I think for a pot roast that's already got potatoes and carrots in it, adding a salad or green beans (or any veggie, really) and rolls would be fine and plenty. If you want to add something like a jello salad or something, that would be fine too. It depends on how all-out you want to go. :)

Red and Green Holiday Mold

I'm assuming one could make this with any colors of jello, to match a given holiday.
