Christmas morning brunch

I would like to make a special brunch for my family for Christmas morning. Just DH, me and the kids (2). I would like some things made the night before. What are your suggestions?? TIA

Breakfast Cheesecake

1 pkg reduced fat biscuits (8 count)
16oz lite cream cheese
2 cups sugar
2 eggs or 1/2 cup egg beaters
2 tbsp flour
cinnamon

Press biscuits into ungreased 9 in cake pan
mix cream cheese, sugar, egg, and flour
spread on top of biscuits
sprinkle w/ cinnamon
bake at 350 degrees for 30min


This is a friend's recipe - but I've had it twice at her house and it is delish! Very rich and cheesy - I would rec serving with something salty like sausage or bacon... and/or w/ fruit.

don't see why you couldn't put it together the night before and bake on Christmas morning.

The 1830 Admiral's Quarter Famous Recipe For
"Blueberry French Toast With Blueberry Sauce"

Servings: 10 to 12

Ingredients:
16 slices of day old Bread. (white with crusts removed)
1 1/2 cup - Blueberries (fresh or frozen)
12 - Eggs
1 cup - Half & Half (or White Milk)
1/3 cup - Maple Syrup
1 pint - Hazelnut Coffee Creamer
1 teaspoon - Cinnamon
1 - 8 oz. pkg of Cream Cheese

Method:
Cube Bread, place half in a greased 9 X 13 baking dish. Cut Cream Cheese into cubes, place over Bread. Top with Blueberries and remaining bread. Beat Eggs, add Half & Half, Hazelnut Coffee Creamer, and Maple Syrup. Beat together. Pour over Bread mixture. Sprinkle with Cinnamon. Cover and chill over night. Remove from refrigerator 1/2 hour before baking. Bake at 350° covered for 30 minutes. Uncover and continue baking for another 30 minutes. (Till center is set.) Serve with Blueberry Sauce

"Blueberry Sauce"

Ingredients:
1 cup - Sugar
2 cups - Blueberries
2 tablespoons - Corn Starch
1 tablespoon - Butter
1 cup - Water
1 tablespoon - Lemon Juice
1 teaspoon - Cinnamon

Method:
Combine Sugar and Corn Starch, add Water, Butter, Lemon Juice. Bring to a boil for 3 minutes. Stir constantly. Stir in Blueberries. You may add 1 teaspoon of Cinnamon.

Egg Bake

3 c. cubed ham
3 c. stale bread, cubed
8 oz. Shredded cheddar cheese.
3 T. flour
1 T. dry mustard
4 eggs
3 c. milk
3 T. margarine, melted

Grease 9 x 13-inch pan. Place 1/3 ham, bread and cheese in pan. Sprinkle 1/3 flour and mustard over this layer. Repeat to make 3 layers. Beat eggs and milk until foamy; add melted margarine. Pour over top of dry ingredients. Cover and set in refrigerator overnight (Will keep a couple of days). Bake at 350^ for 1 hour.

We are having the blueberry French toast for Christmas morning here.

I make this, it's easy and YUMMY! You can make it the night before then pop it in the oven when you wake up.

7 slices white bread (take the crust off)

8 Eggs

1 pound mild cheddar cheese

4 cups milk

2 tsp dry mustard

1 tsp salt

Canadian bacon

Dash Worcestershire



Grease a 9 X 13 pam

Take the 7 slices of bread and tear or cut them of into 1 inch cubes and place them at the bottom of a 9 X 13 pan

Grate the cheese & chop up the Canadian Bacon

Mix all ingredients together and then pour over the bread that is lining the bottom of the pan

Place in a oven at 350 for 1 – 1 ¼ hours



That’s it!! Pretty easy.

You can do regular bacon instead of Canadian, but then you have to cook the bacon first. Canadian bacon is pre-cooked. :)

Brunch Pizza

INGREDIENTS

1 prebaked Italian bread shell crust (14 ounces)
1 tablespoon butter
5 eggs, beaten
1 can (14-1/2 ounces) country-style cream gravy
2 cups (8 ounces) shredded cheddar cheese
1/2 cup real bacon bits
1/4 cup cooked pork sausage

SERVINGS 6
DIRECTIONS

Place the crust on an ungreased pizza pan or baking sheet. Bake at 425° for 5 minutes. In a large skillet, melt butter over medium heat. Add eggs; cook until soft-set, stirring occasionally.

Spread gravy over crust; top with scrambled eggs, cheese, bacon and sausage. Broil 4-6 in. from the heat for 6 minutes or until cheese is melted. Yield: 6 servings.


Country Brunch Skillet

INGREDIENTS

6 bacon strips
6 cups frozen cubed hash brown potatoes
3/4 cup chopped green pepper
1/2 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
6 eggs
1/2 cup shredded cheddar cheese

SERVINGS 6

DIRECTIONS

In a large skillet over medium heat, cook bacon until crisp. Remove bacon; crumble and set aside. Drain, reserving 2 tablespoons of drippings. Add potatoes, green pepper, onion, salt and pepper to drippings; cook and stir for 2 minutes. Cover and cook, stirring occasionally, until potatoes are browned and tender, about 15 minutes. Make six wells in the potato mixture; break one egg into each well. Cover and cook on low heat for 8-10 minutes or until eggs are completely set. Sprinkle with cheese and bacon. Yield: 6 servings.

We have this every year...

Christmas Wife Safer Breakfast


Ingredients:
8 slices Bread
8 slices Ham
8 slices Cheese
6 eggs
2 cups milk
1/4 cup butter


Directions:
Remove crust from bread. Put bread into a greased 9x9 pan. Cover bread with ham, then with cheese. Put rest of bread on cheese. Mix eggs and milk together. Pour milk and egg mixture over the bread, ham, and cheese in pan. Refrigerate overnight. In the morning, pour melted butter over the ingredients in the pan. Bake at 325 degrees for 45 minutes. Let sit ten minutes before serving.


We have about 20 people, and 2 or 3 of these feed everyone.

I make the same recipe as Andi and ditto on the YUMMY and e-a-s-y! I love to make it because I don't even think about being in the kitchen and I can enjoy the morning.

I'm an past Pampered Chef gal here's one of theirs, and it looks sorta fancy:)

12 eggs
1/2 lb breakfast meet
2/3 c cheddar/jack cheese
2 8ct packages Pillsbury Crescent rolls

Heat oven to 325

Using large round baker (can make it long if not round)

Open rolls and unroll
lay so wide ends overlap slightly and form a wreath

Scramble eggs and mix in meat and cheese add scoop of egg mixture to middle of rolls, tuck point of rolls under wide end, should look like a wreath.

Bake for about 25-30 minutes

Can also be made with veggies.
