I was going to make this tonight. I had the recipe yesterday and now I can't find it. I have done keyword search and can't find it either. Does anyone have it? Will you please post it if you do. Thank you!

I posted the gumbo, but I forgot I don't have the red beans and rice!! Silly me! Amy never gave it to me because we don't eat beans. Anyway, the gumbo recipe is up!

I have a dumb question. OK, a couple of dumb questions... What is kitchen bouquet? What is Gumbo filet? And we use bone-in chicken breast or can you use boneless?

Kitchen Bouquet is a browning gravy stuff, KB.
Gumbo File is a sasafras thickening agent, made by Tony Cachere's. It's a little green shaker, used in gumbos and such. newurl{http://www.neworleansshowcase.com/tc03002.html, Gumbo File}

Not a stupid question at all, I NEVER would have known if Amy hadn't shown me, and pointed out where they were in our commissary! You CAN use boneless, but bone in is cheaper, and helps the flavor. The roux is very important, and the skin from the chicken helps make it.

I think the red beans and rice recipe is incomplete. Does anybody know how much rice to put in it, and is that dried kidney beans?

Sorry, missmudd. We just serve it over rice. and yes the kidney beans are dried. My printer wasn't working when I printed it, so I copied it short hand. I tried to make it as complete as possible.

Ok I get it, I live in oregon so I dont know how all these things go together :). I like trying new stuff tho. Have gotten pretty good w/ my wok and making mexican food, would like to try more of the gumbo'y type stuff. I know the kitchen bouqet stuff I can get at the store but the creole seasoning my be a bit of a stretch. Maybe at walmart.... HM....

You should be able to find it at Walmart, or Trader Joe's if you have one.

I found creole seasoning at my grocery store in WI. Couldn't find the gumbo thing, though. I have other stores I can go, though. I just happened to be at the grocery store tonight.
