Side dish in crock pot???

Moms View Message Board: General Discussion Archive: Archive August 2005: Side dish in crock pot???
By Vicki on Thursday, August 25, 2005 - 11:48 am:

I did look in the cooking section and even looked on crockpot.com, but I can't seem to find what I am looking for. Dh is having some guys over Saturday night to play Texas hold em. I am looking for a side dish that can be in the crock pot! They are golfing and then coming over and I want to be out of the house when they get here, so I am making things in crock pots and having it all set up before I leave. I am going sausage in one, and I will also do a caso (sp?)(cheese and salsa) dip for nacho chips in another, but would like to do a side dish in one too. Like maybe some type of potaotes?? I thought about meatballs, but don't want another meat type of thing.... any suggestions??

What about just some beans, go with that mexican theme :)

I was going to suggest baked beans, also. A potatoe dish would work well, too. We did little smokies in bbq sauce for a poker game a while back, and I had tons of leftovers! Good luck. :)

Last time some of them were over I did baked beans... kind of wanted something different this time. Just can't seem to find anything!

Chili?

I would do sweet & sour Kielbasa, or maybe some type of beef or pork with BBQ sauce....with a group of men, you probably can't have too many meat dishes, lol! The cheese/salsa and chips sounds like a great idea, too.

No recipe help here but I would like to let you know I think you are one of the bravest women I know. You are actually letting your husband stay home alone with his friends without any adult supervision. Wow.

Without going into detail, my husband's friends are the very reason we didn't have our wedding reception in the lodge at a nearby wildlife park. I love the animals too much to do that to them.

When we have poker nights, we always fixe chili and Velveeta cheese in the crock pot and serves tortilla chips to make a nacho thing. That might not be what you're looking for, not sure. It's DELICIOUS, you get STUFFED on it, everyone likes it, and it's way toooo easy. We just munch all night on poker nights anyway, you know?

I really didn't want more meat. I am doing the sausages in the crock pot with a tomato sauce on them. I will have another little crock pot with peppers and onions in the same sauce for on top of the sausage on sausage/steak rolls. I also thought about putting some spicy sausage in with the cheese/salsa mixture to have with the chips. I also will have trail bologna and cheese plate, so I think that is enough meat! I just wanted something different than chips and pretzels and that kind of side.... I think they will be hungry after golfing and I wanted kind of a complete meal. Dd is going to make them brownies too. LOL

2lb pkg of frozen hashbrowns, partly thawed
2 10 3/4 cans of cheddar cheese soup
12 oz can evaporated milk
2.8 oz can French fried onions
salt & pepper to taste
combine everything in a greased slow cooker & cook on low 6-8 hours or high 3-4 hours

My dh loves this. When I do it for brunch I add ham.

BTW it comes from my favorite cookbook...Fix-It & Forget-It

How about cheesy potatoes, I don't know a man that doesn't like them. 2 bags frozen shredded hash browns, 1 bag frozen cut up onions, 1 can cream of chicken soup, 1 container of sour cream, and a bag of shredded cheddar cheese (or whatever flavor you like), mix all ingredients and put in crock pot, I usually sprinkle those durkee fride onion on the top. Will go good with your sausages.

Yummy, Emily! That sounds good! :)

Thanks Emily!! That is exactly like what I was looking for! Mary, I make something very similar to the recipe you posted in the oven with corn flake crumbs on top. I have never been crazy for sour cream in the crock pot. Have you actually made this in one?

Thanks again everyone!!

I would do a baked ziti or plain ziti. or something like that. Potatos go good with sausage too. I don't think rice goes so good with italian sausage but it sure is easy.

Since you are doing sausage and pepper heros. I don't think you really need anything else. You got the veg and the meat and the starch.
