Need Dessert Ideas For BBQ....
We are going to a "start the season" BBQ for DD's Field Hockey Team....it is a potluck. We are supposed to bring a dessert, and I would like to bring something that is not as boring as brownies, etc., but can go without refrigeration for a few hours without "melting"...I was thinking of some sort of parfait-type thing in individual cups, but I'm not sure...any ideas? PS(There are about 30 girls on the team -JV and Varsity Combined- and families are invited. When it says to "bring a dessert" how many servings should I prepare????)

I always make a big bowl of oreo pudding/desert/delight (different people call it different things) and it always goes well. I use three of the big boxes of choco. instant pudding, two or more packs of cream cheese (depending on taste), one of the large tubs of cool whip, and a package of crushed oreo cookies. Mix the pudding up as directed on box. Fold in the cool whip, soften the cream cheese and add it in, and add the crushed cookies. Then, just for looks, I crush up just the tops of a few oreos really fine, sprinkle it all over the top, and place oreos around the container edge stuck down in the pudding. There are lots of different ways to do this, such as layering, using vanilla pudding, etc., but this has always been our favorite, and a big hit whereever we take it. And it's not too rich because the cool whip and cream cheese tone it down.
Do you think the oreo dessert would go well in sep. containers? About how many 4 oz. cups do you think the recipe would fill? Also, since it has cool whip, does it need refrigeration...would it separate?
It would go great in seperate cups. Just mix it all up in the big bowl, and then spoon it out. Let's see, the pudding itself is mixed with 9 cups of milk if that gives you any idea of how much this recipe makes. Plus the other ingredients add a little more to it. I just filled up the bowl that I make it in with water, and it holds 17 (8 oz) cups of water. This is a rather large bowl, and you can easily pare down this recipe if you don't want that much made. Use two boxes of pudding, and add the other ingredients to taste. Just make sure to soften the cream cheese, either by sitting out, or in the microwave, because it is much easier to mix like that. It will still be a little lumpy, but with the oreas, this is the texture of the pudding. I have used it for Bible School picnics, family reunions, all outside, all unrefrigerated. I usually make mine the night before, so I stick it in the fridge then, but during the event, I have never had a problem. It doesn't seperate, and it even tastes great without being cold.
Thanks for the tip on the oreo "delight" It went VERY well - I used 5 regular sized boxes of pudding (10cups milk), 2 bars of cream cheese, one whole crushed pkg. of oreos, and a LARGE tub of cool whip. I spooned it into clear 90z. cups (about 1/2 full), stuck a whole oreo in the top of each, and put a clear spoon in each one as well. They were gone as fast as people could grab them! A success !
