Pre-making mashed potatoes
I want to prep the potatoes ahead of time (cut, peel) but make them at actual dinnertime. How do I do this? I mean how do I store the taters until I'm ready to cook them? I've always made them when we were ready to eat them. Silly question from a semi-cook!!!
I've done everything (peel, dice, boil) before and then do the mashing at the last second. Mmmm...I haven't made them in a while. Thanks for the craving!
Cut them but make sure they are totally submerged into water while they sit in the fridge until you decide to cook them otherwise they will turn brown. I do this allot and it works great.

You can go ahead and make them all the way including mashing them then stick them in your crock pot and leave them on low. They stay just like fresh mashed. I did this at thanksgiving this year and was amazed at the results. I thought they might dry out but they were great.

I agree, keep them warm, IMO the consistency is odd if they are chilled first.
There is a yummy recipe somewhere for party potatoes in the crock pot. You make it the night before with cream cheese or sour cream. We had them once and they were SO good. I'll see if I have the recipe.

Eve, that sounds great! If I know I will be pressed for time, I will cut them and put them in the pan, covered in water, in the fridge. I usually use red potatoes and I do not peel them before mashing them. I sometimes throw in sour cream (but ds can always tell when I do and he usually complains about that) and usually throw in garlic, lots of pepper, some salt, milk and butter. Yum!!
The Crock Pot trick really works! A friend told me about that a couple of years ago & I do it ALL the time now! I can make them a few hours ahead of time & they're GREAT!
