Easter Dinner Menu....

Moms View Message Board: General Discussion Archive: Archive March 2005: Easter Dinner Menu....
By Eve on Monday, March 21, 2005 - 08:17 am:

I'm helping my Mom decide what to make. We are definately making hams. I'm thinking German Potato Salad. I'm trying to think of something a little different.

What are you having?:)

By Kernkate on Monday, March 21, 2005 - 08:27 am:

We are having a spiral ham, rutabaga, cole slaw, sweet potatoes, kielbassi {fresh and smoked} mashed potatoes, green beans, tossed salad, black olives, {Alissa has to have them every holiday to put on each finger...LOL} and for dessert Brett loves chocolate pie, so he makes that every Easter.
I will be having 10 here for dinner so it will be nice.

I have no idea. DH does not want ham, he is thinking Italian. Sorry, I'm not much help.:)

By Rayanne on Monday, March 21, 2005 - 09:06 am:

We are having a Honey Baked Ham and Kentucky Fried Chicken. My Mom thought that we would do something different for a change.

By Ginny~moderator on Monday, March 21, 2005 - 09:30 am:

Kate, my father and I loved black olives. Mom always put them out in a relish tray for holiday meals, and always bought an extra can for dad and me to sneak before the meal.

Hot german potato salad sounds wonderful. I love it, but not a lot of people seem to know it. My son did something nice with a salad last family get-together, with small orange (I think Clementines) sections, toasted walnuts, spring greens, red onions, red and yellow peppers for color, and I can't think what else but will ask him.

Of course, rolls or biscuits, depending on your family's preferences.

I always have two desserts - angel food cake because it is light and nice after a heavy meal, and something rich and chocolate for the male hollow-leg appetite.

My kids LOVE ham, so ham it is! LOL! With whipped potatoes, cream peas, dinner rolls and I'm not sure what else as of yet.

We are doing a spiral ham and a turkey - I have not decided about the sides yet.

By Tink on Monday, March 21, 2005 - 11:46 am:

Ham, au gratin potatoes, fresh green beans with bacon, crescent rolls, salad and fresh strawberry pies. I always do the deserts and the kids want a cake so I'll probably make a bunny cake too.

By Sunny on Monday, March 21, 2005 - 11:58 am:

I make a ham, but my oldest doesn't eat pork products anymore so I may make a turkey breast, too.
For the sides, I have mashed potatoes, sweet potatoes, green beans or broccoli/cauliflower mix and pineapple stuffing, which I started making a few years ago. We also have regular pineapple slices and dinner rolls. I'm not sure yet what kind of dessert we'll have. I was thinking of making a carrot cake this year, or I'll stop at the bakery and see what looks good. :)

My sisters and I cook the meal and alternate whose home it will be at. This year it's at her house. We are having a brisket, ham, marinated cold veggies, green salad, some kind of potatoes and some kind of dessert.

Hlgmom, could I have the recipe for the mushroom/crab cheesecake, chicken salad and the chocolate banana wontons???

By Hlgmom on Monday, March 21, 2005 - 02:48 pm:

Asparagus is so good and fresh this time of year. Simply steamed and served with Hollandaise sauce is lovely

By Jann on Tuesday, March 22, 2005 - 07:59 am:

Roasted with garlic is yummy too!

By Dandjmom on Tuesday, March 22, 2005 - 03:43 pm:

Sounds delicious Kathy, please can you tell me how to prepare rutabaga's. This is something that I used ot eat with my dear sweet grandmother. I haven't had any rutabagas since her passing.

Oh and by the way me and the kids will be having spirial ham, potatoe salad (rutagaga instead if I can get instructions on prep from Kathy), sweet potatoes. mac n' cheese, and green beans.

Yummeee! You all are making me hungry! (DD has been sick, sorry I haven't had a chance to post.)

You have given me some great ideas! Thanks!

Ginny-German potato salad is a favorite in our family. The Mom's family lived in Germany, so we love Weiner Schnitzel too! (I use pounded chicken instead of veal though.)

Ok, Heather, YUMM! Your menu sounds fabulous!

Bea, I am trying out a recipe tonight with asparagus. It has OJ from concentrate, fat free mayo, dijon mustartd, orange peel. It sounded yummy to me over steamed asparagus.:) (That is, if DD is feeling better!)

By Kernkate on Wednesday, March 23, 2005 - 10:36 am:

Letishe, I buy the whole rutabaga, peel them, cut in small pieces and boil them. They do take a while to cook, just boil until they get soft, then I mash them with butter. Now my Dad just likes to boil them and leave them in pieces without mashing with just butter on them. But I like them mashed.
