Saint Patrick's Day Meal

Moms View Message Board: General Discussion Archive: Archive March 2005: Saint Patrick's Day Meal

Corned Beef is not a popular Irish dish. However, the true Irish meal for Saint Patrick's Day is Boiled Bacon, Potatoes and Cabbage. What we sell as a Picnic Butt of Ham, is what the Irish call bacon. Our bacon is called Rashers in Ireland.

BOILED BACON AND CABBAGE

Serves 4

2 1/2 pounds of bacon (a large Picnic Butt)
cubed to pieces about 4 or 5 inches
1 good-sized cabbage quartered and cored
4-6 peeled medium sized potatoes, halved

Place the meat in a pot, cover with cold water and bring to a boil. Add salt if required. Remove the surface sediment. Add potatoes and simmer for 30 minutes per pound of meat.

Quarter the cabbage and add to the pot. Cook gently for about 1/2 hour, or until cabbage is cooked to your liking - do not overcook! Drain and serve with mustard or brown (HP) sauce.

That sounds yummy! I LOVE Corned Beef w/ Cabbage, though! Maybe we'll make both this year.

thanks Bea, my mother is adamant that corned beef and cabbage is not an irish dish. We always did the smoked shoulder, w/cabbage and veggies.
