Potatoe Soup??
Does anyone know how to make potatoe soup? I made it before but it has been a while back and I can't remember. I wanted to make this today. I appreciate it.
Me me! It's my favorite. 2 cans of chicken broth 2 cans of cream of chicken soup 1- 2 pound bag of frozen hash browns Boil hash browns in salted water until tender- just enough water to cover the potatoes. When the potatoes get soft add the cans of stuff then let it simmer for an hour or two. You can have shredded cheese and bacon bits out for the family to put on top. It is so yummy. I am doing this by memory so this is not the exact recipe. LOL.
That sounds great but I don't have any of that, I have potatoes and I was thinking I could make it with regular potatoes and some other ingredients. I guess I will use trial and error and hope for the best. Dh really wants some tonight since I told him I was thinking about making it. Wish me luck.. or post quick..lol
I found this recipe...sounds like something my mom makes, only using whole milk and no sour cream... Also, she doesn't bake her potatoes first. But probably a start for you... Try checking allrecipes.com That's where I get a lot of recipes. 1/3 cup butter 1/3 cup all-purpose flour 4 cups skim milk 6 large baking potatoes, scrubbed 1 cup sour cream -------------------------------------------------------------------------------- DIRECTIONS: Microwave potatoes until done. While potatoes are cooking make a roux over low to medium heat. Mix butter, margarine, or light olive oil, and flour. DO NOT BURN THE ROUX. When roux is thickened a bit, gradually blend in milk. Continue cooking over low to medium heat while preparing potatoes. Peel and cut up potatoes. You may want to mash some of the potatoes also. Add potatoes to the milk mixture. Blend in sour cream. Soup is ready to be served.
I make mine with a reconstituted can of chicken broth or with four cups of water and two bouillon cubes. Heat the soup or water to a slow simmer. Add the bouillon cube if needed. Cut up 5 medium potatoes into about 1/2 inch pieces chop 1 medium onion Add the potatoes and onion to the broth. Cover and simmer on low for about a half hour or until potatoes are tender. Add two cups of milk and 1/4 pound of butter. Mix 1/4 cup of corn starch or flour with 1 cup water. Add slowly to soup, stirring until thickened to your liking. Discard the rest of mixture. Salt and pepper to taste.
I love potatoes so much I don't think I could mess anything potato up. Well, we ate and it was good, I ended up finding a plain potato soup recipe on that link, Adena, thanks! Next time I will buy some more stuff and make these yummy sounding recipes you posted here! Thanks again all.
