I cooked a chicken in the Crock pot last night and have have about 1 1/2 - 2 cups of cooked chicken left over...any ideas out there on what I can make with it????

What about something like a tuna casserole but use chicken instead?
Noodles, cream of chicken, cheese, frozen peas, sour cream, chicken. Sprinkle crackers on top and bake.

We had chicken noodle soup with left over chicken tonight. You could do chicken quesadillas or chicken pot pie.

chicken soup, chicken salad sandwiches, stir fry, wraps, on salad, chicken pot pie, chicken ala king, chicken tacos, chicken enchiladas, gumbo, open faced chicken sandwiches.......
I like rotissering a chicken so I can make yummy recipes with the leftovers! LOL
