Lunch Time Help

Hello, what are you SAHMs eating for lunch? I have a 9 month old who awakens from his morning nap, we usually play for an hour then he has lunch at noon and more play after. I find it really challenging finding the time to eat at this point in the day. I'm still nursing so getting enough to eat is important. Sometimes I don't end up eating until he is down for his afternoon nap which means I'm not eating until 2 or 3 in the afternoon and it totally throws off dinner. I just can't do the sandwhich thing or leftovers. Any suggestions for easy, nutritious lunches?

Yogurt, soy milk smoothies (vanilla soy milk, frozen fruit, a little bit of peanut butter and a bananna - throw it all in the blender), interesting sandwiches like turkey, cranberry sauce and stuffing on toasted whole wheat bread, turkey, cheddar and apple slices, basil/sundried tomato ham on toasted whole wheat bread w/fresh spinach and a little bit of pesto, basil pesto, fresh spinach, tomato, provolone cheese, artichoke hearts and roasted red peppers again on toasted whole wheat bread. Or a little bit of cheddar cheese with whole wheat crackers and fruit, a salad w/grilled chicken (grill a big package of chicken breasts over the weekend, slice them up and leave in the fridge to throw over salad. If a whole sandwich is to much then just eat half and save the other half for the next day (or just use one piece of bread)

I lived off of slimfast, not to lose weight but because I could keep cans of it in the fridge and then down one when I couldnt stop long enough to eat. They filled me up enough to make it to when I could actually prepare myself something to eat. I started drinking them while prego because I needed more protein in my diet and it was an easy way to get it.

Lunch is never a problem with me since I am a soup and sandwich or salad girl myself.

You could try making small plates at dinner time which you could freeze then reheat in the microwave for lunchtime. Your own tv dinners, so to speak, but healthier.

You could have yogurt, small salads, chicken/egg/tuna salad on crackers, mixed fruit, items wrapped in a tortilla, veggies with dip, steamed veggies.

My favorite sandwich or pita or wrap is Turkey, sprouts, avocado, chives or green onion and italian dressing (usually make myself). Avocados are a great source of healthy fat.

Soup is great too you can make all sorts of different soups and freeze them. Make a large pot of a different soup a few nights a week feed it to your family for dinner and freeze the rest. Then eventually you might be able to get it to where you have a selection of things to grab. Also salmon right out of the can is great on salads with a vinigrette and very healthy for nursing mothers! If you like them keep baby carrots on hand they are a great quick snack with some ranch or peanut butter.

Finding time to eat lunch is hard. What worked for me is planning ahead have a weekly plan and its so much easier to find time to eat. Rather than standing at the pantry thinking ok what am I gonna eat and then walking away because you really don't have any more time to think about it. Then you put it off and so on LOL! Can you tell even though I plan SOMETIMES I do still do this to myself. And then truthfully it makes me grumpy.
