Buffet Carrots
A simple, yet popular favorite with all carrot- lovers. Estimated Preparation Time: 30 minutes Estimated Cooking Time: 1 hour Serves: 16 Ingredients 1/2 tsp. Sugar 1 tsp. Salt 3 tblsp. Margarine or Butter 32 oz. Carrots 2 tblsp. chopped Chives or parsley Directions 1) Cut carrots into matchstick-thin strips. 2) In 5-quart saucepot over high heat, in 2 inches boiling water, heat carrots to boiling. Reduce heat to low; cover and simmer 2 to 3 minutes until carrots are tender-crisp. Drain carrots; return to saucepot. 3) In saucepot over low heat, toss carrots with margarine or butter, salt, and sugar. Remove saucepot from heat; stir in chopped chives. from longisland.com
