Good Friday lunch ideas??
My mom has her VERY EXTREME Catholic friend visiting from Ireland. I want to invite them for lunch on Friday but I need some ideas. Something good that fits in with the no meat thing for Good Friday. TIA
How about a shrimp and pasta salad or a veggie soup with cornbread? I have a great recipe for a spinach spoonbread recipe if you want.
My relatives are Scotish. They don't like anything with any taste. Try broiled Filet of Sole with butter and lemon. Boiled Vegetables like carrots. Boiled Potatoes. Tea Pound cake for dessert.
Just remember that your guest will probably also be fasting on this day. If you prepare a large lunch she will not be able to eat dinner that evening. "Fasting is to be observed on Good Friday by all Catholics who are 18 years of age but not yet 59. Those who are bound by this may take only one full meal. Two smaller meals are permitted if necessary to maintain strength according to one's needs, but eating solid foods between meals is not permitted."
