Molten Lava Cake with Raspberry Truffle Center
Molten Lava Cake with Raspberry Truffle Center 8 oz or 2 sticks, unsalted butter 8 oz semi sweet chocolate pieces or chips 1/3 cup Chambord or other raspberry liqueur 5 egg yolks 5 whole eggs 1/3 C sugar ½ C flour Preheat Oven to 400° F Generously grease 8 - 6 oz. Baking cups Place Cups on baking sheet In a double boiler over hot water, Melt butter and chocolate pieces slowly Cool to room temperature. Add liqueur In a large bowl, beat egg yolks eggs and sugar together until thick and lemon colored Quickly fold in chocolate mixture Beat until well blended. Divide batter evenly among prepared cups and bake about 12 minutes or until cakes are firm around the edges but soft in the center. Let stand 1 minute Run a small knife around baking cup edges Carefully invert baking cups on to individual dessert plates drizzled with raspberry liqueur Sprinkle with confectioners sugar and serve
