I like steamed brocolli served w/ cheese sauce.

To make sauce:

1 tbs of butter
1 tbs of flour
2 cup of can milk
several slices of AMERICAN cheese (real cheese wont work)

(you can easily double the recipe!)

Melt butter, carefully stir in flour to make a paste being careful not to lump. SLOWLY add milk a drizzle at a time while stirring until you use it all. Stir until it begins to thicken. Add in slices of cheese a slice at a time (I actually tear mine into pieces) and continue stiring. I just add enough cheese (usu about 5 slices) until it is nice and thick and yellow.

Pour over veggies


I also like brocolli quiche. Using a prepared pie crust, making your own, or using pilsbury crescent rolls shapped into pan:

4-5 eggs
about 3/4 milk?
Lots of shredded cheddar and Monteray Jack
Salt/pepper to taste
about 1 1/2 cups shredded brocolli?
1 med onion diced very small
garlic powder

I put brocolli, onion and garlic powder into a pan to saute. (Let it cool a little before adding to egg mix)

Mix together eggs, milk, cheese and salt/pepper.

Stir in veg mix. Pour into pie pan. Cook at 350 until it looks done (sorry I dont ever use a recipe for this stuff) It takes a while, so plan for an hour to cook. It might finish before that, but it is easy to keep warm til dinner if you mistime it. Test the center to make sure there is no slimy egg still uncooked.

I make this same dish with brocolli, spinache or zuccini.

sometimes we stir fry it as well, with ginger, garlic, red pepper, and soy sauce. The orange juice thing is my favorite.

They all sound wonderful. Why can't I cook vegetables?

I saw that you can bake brocelli and other vegtables. I think it was 12 minutes on each side at 425 degrees.

You wet with olive oil and salt and pepper.

This can be done with any vegetable. Some vegetables take longer.

Fresh Broccoli Salad

8 slices of bacon fried, drained and crumbled
1 large head of broccoli chopped
1 c. grated Cheddar cheese
½ c. golden raisins
1/4 c. green onion, finely chopped
1 c. Miracle whip
½ c. sugar
salt and pepper to taste


Mix Miracle Whip, sugar salt and pepper. Toss with the rest of ingredients. Cover and refrigerate at least overnight. The flavors get better as it sits.

BROCCOLI BRUNCH CASSEROLE

8 - 10 slices of bread torn small
3 c. cheddar cheese, grated
2 c. cooked ham, cubed
1 box frozen chopped broccoli
10 eggs beaten with 3 c. milk
1 c. sliced mushrooms or 1 8 oz. can stems & pieces, drained
½ c. onions, chopped
½ c. green pepper, chopped
¼ c. fresh parsley, chopped
½ tsp. salt
pepper to taste
8 - 10 slices of cooked bacon, crumbled


Grease a 2½ quart casserole. Starting with bread, add in layers; 2 c. cheese, broccoli, onion, green pepper, mushrooms and cubed ham. Add salt, pepper and parsley to egg mixture and pour over all. Sprinkle remaining cheese and then crumbled bacon over all. Cover and refrigerate overnight. Bake at 350 degrees for 35 - 45 minutes. Serve bubbling hot.

We love it steamed, sorry! Nothing original from me! I do like to saute it in olive oil and garlic too. That's how my Mom always made it. I love it with cheese sauce too.
