CURRIED SHRIMP

CURRIED SHRIMP

¼ c. melted butter or margarine
1 ½ c. milk
¼ c. flour
3 T. ketchup
½ tsp. salt
¼ c. cream sherry wine
dash paprika
2 tsp. curry powder
1 ½ c. cleaned deveined shrimp
2 c. rice cooked with ½ tsp. saffron
2 T. chopped parsley
¼ c. green onion chopped


Blend butter. flour and seasonings; gradually stir in milk. Simmer stirring until thick and smooth. Add ketchup, sherry and shrimp. Heat until shrimp turn pink. Serve over rice. Sprinkle with green onion and parsley.
