ITALIAN MEAT LOAF
ITALIAN MEAT LOAF 1 lb lean ground beef ¼ c. bread crumbs ½ c. grated Parmesan cheese 1 egg ½ c. catsup ¼ c. milk ¼ c. chopped onion ¼ c. chopped green pepper 2 cloves garlic, minced 1 tsp. oregano 1 tsp. sweet basil 1 tsp. chopped parsley ¼ tsp. salt ¼ tsp. fresh ground pepper 4 thick slices mozzarella and or provalone ¼ c. dry red wine Mix all ingredients except ¼ cup of the catsup, ¼ cup of the Parmesan, the cheese slices and the wine, together. Work with hands until well mixed. Roll into two large balls. Flatten one ball in round baking pan, (a pie pan will work.) Arrange cheese slices on ground beef mixture. Flatten second ball on top. Press sides together to seal. Mix remaining catsup wine and grated cheese together. Spread over meat. Bake uncovered in 350 oven for 45 minutes. Great served with baked potatoes and a veggy.
