Hi,

I want to bake birthday cupcakes for a Mommy and me I am going to with my two year old. I want to bring birthday cupcakes in on my son's birthday, but I think I need to make them healthy. The Mommy and Me is at 10:30 in the morning and I think the other mommies wouldn't like me bringing in pure sure that early for snack time.

Any help would be appreciated.

How about carrot muffins with cream cheese frosting? (I'm making myself hungry!)

Carrot Muffins
Prep time: 15 min.
Baking time: 20 min.
Yield: 12 muffins

Nonstick cooking spray
1/2 cup butter (1 stick)
2 eggs
3/4 cup sugar
1/2 cup milk
1 1/2 cup grated carrots
2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
Optional: 1/2 tsp. cinnamon or nutmeg
Pinch of salt

1. Preheat oven to 400 degrees. Spray muffin tin or use liners. Melt the butter in a small saucepan.
2. In a large bowl, use an electric mixer or a whisk to beat the egg and sugar well, about 2 minutes. Add the milk, melted butter, and carrots. Mix well. Sift the flour, baking powder, baking soda, cinnamon or nutmeg and salt over the egg mixture and stir until smooth.
3. Sppon about 1/4 cup batter into each muffin cup. Bake on the middle shelf for about 20 minutes or until goldern brown.

Per serving (1 muffin): 228 calories, 8 g fat, 92 mg sodium, 19 mg cholesterol.

I don't have a cream cheese frosting recipe handy, but I'm sure you'll find something if you do a search at http://www.allrecipes.com.

For 2 yr. olds, you could try minnie muffins. Hope this helps!

I was going to suggest the exact same thing. For cream cheese icing take one brick of cream cheese and had about 3/4 of a cup of icing sugar and a capful of vanilla, beat together well. This is my fav carrot cake icing. You can add walnuts too but I wouldn't do this unless you know about the allergy factor of all the kids :). It is also ok to put less icing sugar for less sweetness
