Hi, Kathy:

I make a delicious pot roast in my crockpot. It's so simple & quick to throw together, & DH & the DK's just love the flavor of the gravy. I serve it over rice or mashed potatoes.

Set the crock pot on high. Throw any kind of beef roast you like in there, any size. Dump a can of Campbell's Cream of Mushroom soup on top. Sprinkle an envelope of Lipton's Onion Soup Mix on top of that. Put the cover on! That's it! Let it cook all day, & it'll be ready to eat for dinner time, & the gravy will be perfect.

You can add some peeled & cubed potatoes & carrots if you like about 1/2 hour before you're ready to eat.

I recommend the crockpot cookbook "Fix it and Forget it". It's full of recipes sent in by real people like you and me. It has several versions of most items so you can pick the one with the ingredients your family likes. Best of all it gets your creative juices flowing and before long you'll just start experimenting. I love my crockpot (when I remember to fill it in the morning). I've also started making soups in mine. They're really good and low-fat.

Try this chicken soup:

2 1/2 cups hot water
2-3 cubes of chicken boullion
1 can chicken broth
two big handfuls of home-style noodles
About a cup of cooked chicken chopped (I use Perdue shortcuts)
1 carrot chopped
1 celery stalk chopped

Cook on low 3-4 hours.

Also try cutting raw chicken into strips and putting into the crockpot with a bottle of your favorite barbeque sauce and a sliced onion. Simmer on low about 2-3 hours. Serve on buns with beans and cornbread.

Good Luck :)

I love to make Chicken or Beef Tacos in the crock pot. I take about 3- 4 boneless skinless chicken breasts or sm-med beef roast and add a can of Mexican Stewed tomatoes with the juice and a pack of taco seasoning mix, you can find this at any grocery store. I add whatever amount of water the packet of seasoning mix says to use. I turn the Crock Pot on LOW and let it cook all day! It is soooooo YUMMY!!

Something I got from my sister and I think it is wonderful. BBQ chicken and BBQ ribs. I put my meat into the crock pot and add my bbq sauce and let it simmer all day. The meat comes out tender and tasty.
I also make my stew in the crock pot. I put in all the ingredients that I want in my stew and I mix up about 5 packets of brown gravy (don't cook it) and add it to the stew. Let it cook on low all day. You will need to stir in every couple of hours just so that the gravy doesn't cook to the bottom. The sauce comes out slightly thick and everything tastes wonderful.

Oven roasted chicken. Ball up about three balls of tinfoil, fist size and place on bottom of crockpot. Use a whole chicken, cut up, or any other part of chick, with the bone. Wash, pat dry, sprinkle with salt, pepper and paprika. Place in pot on top of tinfoil balls and cook on low fro 6-8 hours, until juices run clear.
The chicken actually gets brown and falls off the bone. It's great for summertime when you don't want to turn on the oven and stay in the kitchen!
