Andouille in Comforting Barbecue Sauce - and - Zucchini Swedish Meatballs
I need a finger food/appetizer recipe that is out of this world! Tomorrow night is our Annual Parent's meeting and mom's are supposed to bring a finger food, dads bring a dessert. WEll Todd has been preparing for months--he has to keep his title as dessert king....and I think the recipe he has chosen this year is a winner again Well your truly has procrastinated again and I have 24 hours to come up with a super finger food. It can be anything just has to serve 16-20 and can't be sweet. I have to take it with me so baking it there is not an option, so it has to be something that travels well...maybe a crock pot recipe I have searched 3 years of Quick Cooking and taste of Home Magazine and nothing really strikes my fancy! any super ideas out there? the dads judge the moms and the moms judge the dads so think Male appetizer....those cute feminine things don't go over well with the judges and vegetables don't even merit a vote!! In 10 years I have never won and Todd has won 4 times...so girls help me out here! Please I'm desperate TIA
What about asparagus rolls?
Well Barb, in my experience men like MEAT, so here's a couple I hope you might like: This one you can serve from a crockpot ANDOUILLE IN COMFORTING BARBECUE SAUCE Cajun, Appetizers Yield: 25 servings 4 c Onions, finely chopped 1 c Celery, finely chopped 1 c Bell pepper, finely chopped 1 c Parsley, finely chopped 1 c Peanut oil 1 tb Garlic, finely chopped 3 c Steak sauce 1/2 c Louisiana hot sauce OR 3 c Ketchup 2 tb Cayenne pepper 3 ts Salt, to taste 1 c Southern Comfort Liquor 1 lb Andouille sausage Saute onions, celery, bell pepper, and parsley in peanut oil until the onions are clear or tender. Add garlic and cook a little longer. Add steak sauce, hot sauce, and ketchup. Add salt to taste. Add Southern Comfort. Bring to a boil. Lower heat and cook for 2 to 3 hours. Makes about 3/4 gallon. This will keep in the refrigerator for weeks. Slice 1 lb. andouille or smoked sausage 1/4 inch thick and combine with 1 cup sauce. Heat well on stove or in a chafing dish. Serve with small pieces of French bread or use teethpicks to spear andouille. You will need plenty of napkins, also, too. "Other smoked sausages may be used, but we like andouille." From Justin Wilsons "Outdoor Cooking With Inside Help ." This one is too easy and simple You can serve from the crockpot too. Zucchini Swedish Meatballs 1 small onion 2 small cans mushrooms -- drained 3 eggs 1 teaspoon seasoned salt 3 pounds ground beef 2 cups zucchini -- grated 2 cans cream of mushroom soup Whirl onion, mushrooms, eggs and salt in blender. Mix with ground beef and zucchini. Form into small meatballs. Bake on large shallow baking sheet 30 minutes at 350 degrees. Carefully pour off grease, saving gravy-type liquid that forms. Pour into crockpot or warming dish with cream of mushroom soup. Keep warm. Serve as an appetizer or as you would regular Swedish meatballs. I don't know if the recipes are winners but good luck in the contest!
LOL Hmmm since this is for a Christian Support Group and non of our members drink--I wonder how well the Southern Comfort would go over--probably win hands down. I might fix that for our family reunion tho! it sounds good! Karen I thought about the aspargus rolls but will men eat them? LOL

LoL Barb...and what would happen if you got busted in the liquor store? hee hee Remember though that the alcohol cooks out, just the flavor is left. How about Lady Finger sandwiches? Lol, I can just see the guys sticking out their pinkies so daintily
