Can someone Help with a Recipe?

I wanted to know if anyone had good breakfast/brunch recipes? egg strata? egg bakes? anything I can make for Easter. TIA Brooke i know Bea always has great recipes...

Egg Bake

3 c. cubed ham
3 c. stale bread, cubed
8 oz. Shredded cheddar cheese.
3 T. flour
1 T. dry mustard
4 eggs
3 c. milk
3 T. margarine, melted

Grease 9 x 13-inch pan. Place 1/3 ham, bread and cheese in pan. Sprinkle 1/3 flour and mustard over this layer. Repeat to make 3 layers. Beat eggs and milk until foamy; add melted margarine. Pour over top of dry ingredients. Cover and set in refrigerator overnight (Will keep a couple of days). Bake at 350 degrees for 1 hour.

This one ALWAYS disappears quickly at church functions! It's soooo good! Oh yeah. Somewhere along the line, I thought doing it in layers was dumb and you can't really tell that they are there, so I just throw everything in the pan and pour the egg mixture over it. I usually throw the eggs, milk, flour and dry mustard into the blender.

Here's my favorite, and it's really easy. This recipe serves 5-6. Oven baked Apple Pancakes and Sausage

8 ounces Brown & Serve Sausage links
1 cup pancake mix (the kind you add egg and milk to)
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup milk
1 egg
1/2 cup chopped apple.

Brown sausage according to package directions. In a mixing bowl, combine remaining ingredients except aple. Mix until smooth. Add apple. Pour into well-greased 10x6 x 2" deep baking dish. Arrange sausages on top. Bake in 450 degree oven for 20 minutes. Serve hot with syrup.

Mom used to arrange the sausages so that she could cut the finished product in squares with an equal amount of sausage on each serving.

Here's pretty much the same thing, to serve 10. This one doesn't call for pre-cooking the sausage, I think because the pan is very shallow and you cook at a higher temperature. It is more work, from not using a mix.

Oven Baked Pancakes with Sausage - average yield 10 servings

Prepare greased 10-1/2x15-1/2” jelly roll pan. Pre-heat oven to 450 degrees.

3 eggs - beat until fluffy
Add: 1-1/2 cups milk
3 tablespoons melted shortening
Beat mixture
Sift together:
1-3/4 cups sifted all-purpose flour
4 teaspoons baking powder
1-1/2 tablespoons sugar
1 teaspoon salt

Add to liquid ingredients

Pour into greased jelly roll pan

Arrange 2 packages Brown&Serve sausages on top of batter

Bake at 450 for 15 minutes - serve with butter and syrup
