Irish Boiled Bacon and Cabbage

Corned Beef is not a popular Irish dish. However, the true Irish meal for Saint Patrick's Day is Boiled Bacon, Potatoes and Cabbage. What we sell as a Picnic Butt of Ham, is what the Irish call bacon. Our bacon is called Rashers in Ireland.

BOILED BACON AND CABBAGE


Serves 4

2 1/2 pounds of bacon (a large Picnic Butt)
cubed to pieces about 4 or 5 inches
1 good-sized cabbage quartered and cored
4-6 peeled medium sized potatoes, halved


Place the meat in a pot, cover with cold water and bring to a boil. Add salt if required. Remove the surface sediment. Add potatoes and simmer for 30 minutes per pound of meat.

Quarter the cabbage and add to the pot. Cook gently for about 1/2 hour, or until cabbage is cooked to your liking - do not overcook! Drain and serve with new boiled potatoes and mustard or brown (HP) sauce.

We used to eat it as kids and weren't even Irish.
