Casserole For Christmas Morning

CHEESY HASH BROWN CASSEROLE

1 pkg Frozen Shredded Hash Browns
1 can Cream of Chicken soup
8 oz. Cheddar cheese, shredded
¾ c. sour cream
¼ c. butter, melted
2 Tbsp. onions, chopped

Topping
2 c. Cornflakes
½ c. butter melted
toss together and sprinkle over casserole.



Grease a 9 x 13 inch baking dish. Preheat oven to 350° F. Thoroughly mix all ingredients except hash browns. Add the hash browns to the other ingredients. Toss to mix well. Pour into baking dish. Sprinkle topping over casserole mixture. Bake uncovered, for 45 minutes.

I LOVE cheesy hashbrowns! Yum! My SIL makes them every Christmas!

I make this every Christmas. As a breakfast food, I use Cream of Potato soup and leave out the onions. I make it first for our large family gathering which we have changed to Christmas eve brunch - this way we can decompress Christmas day, we have different foods, and then we have time for the kids to play without having to rush to the next place.

I also fix what I call breakfast casserole with eggs, sausage, cubed bread, and cheese.

I always do a 2nd small dish of each for our house on Christmas morning, so we have something for the grandparents when they come to see what Santa has brought.
