Cheesy Chili Casserole
This was very yummy so I wanted to share! With only 2 of us and a 3yr old, I will cut it in half next time and use an 8x8 instead. Just because we won't eat all the leftovers. I marked what I used instead on a few places! Cheesy Chili Casserole Prep: 30 min. Cook time: 30 min. Need: 1 2/3 c. uncooked macaroni 1 med. bell pepper, chopped (I didn't use) 1 med. onion, chopped (used onion powder instead) 1lb. lean ground beef 1 pkg. taco seasoning water as needed on taco seasoning pkg. 8 slices American cheese 1 can (15oz)mild chili beans in sauce, undrained 1 can(14.5oz) diced tomatoes, undrained (used petite diced) 1 c. frozen corn(used 1c. of can peas since that's all I had) 1/2 t. salt Cook pasta and drain. Meantime, brown ground beef with onion and pepper. Drain and add taco seasoning mix along with amount of water listed on package. Continue cooking per package directions. (Usually another 5 min.) Tear up 2 pieces of cheese and combine with macaroni, seasoned meat mixture, chili beans, tomatoes, corn, and salt. Mix very well. Spoon into 9x13 pan and bake 30 min. @ 350. Top with remaining cheese slices and bake 1-2 min. more just until cheese begins to melt. Enjoy!
That sounds like something our family would enjoy and I can add a salad on the side for the kids and I. Like your DH, mine doesn't do most veggies at all.
We had bread with it and I didn't even think of salad. That would be a great side for it.
