I need to try this soon. It sounds sooo good. Barbecue Beef 3-lb boneless chuck roast 1-cup barbecue sauce 1/2 cup apricot preserves 1/3 cup chopped green peppers 1 small onion, chopped 1 tsbp Dijon mustard 2 tsp brown sugar 12 sandwich rolls Cut roast into quarters. Place into greased slow-cooker. Combine barbecue sauce, apricot preserves, green pepper, onion, mustard and brown sugar. Pour over roast. Cover. Cook on low 6-8 hours. Remove roast and slice thinly. Return to slow cooker; stir gently. Cover. Cook for 20-30 minutes. Serve beef and sauce on rolls. Makes 12 servings. From Fix It and Forget It cookbook. p. 130

Have you actually made it? It is on my list. I'm just excited that I get to take more chicken barbecue for my supper at work tonight, instead of a normal cold sandwich, which I'm getting rather sick of. Also, my kids will have leftovers for themselves to eat, while I'm working tonight.
yes, of cousre I always follw th tecipe the first time & then add my own touches later. My dh really enjoyed it. I also cooked it over night the last time & shredded the meat.
