BUTTERSCOTCH CREAM CHEESE BARS
BUTTERSCOTCH CREAM CHEESE BARS 2 cups butterscotch chips 1/3 cup butter 2 cups graham cracker crumbs 1 cup chopped pecans 8 oz cream cheese, softened 14 oz can sweetened condensed milk (such as Eagle brand) 1 egg 1 tsp vanilla Combine the butterscotch chips & butter in a saucepan. Cook over low heat until smooth, stirring constantly. Remove from heat. Stir in the graham cracker crumbs & pecans. Press 1/2 of the crumb mixture over the bottom of a greased 9x13" baking pan. Beat the cream cheese in a mixer bowl until fluffy. Add the condensed milk, egg & vanilla. Beat until blended. Spread over the prepared layer. Top w/the remaining crumb mixture. Bake in a preheated 350° oven for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool to room temperature on a wire rack. Chill, covered in the refrigerator before cutting into bars.
