Blue Cheese Re-Stuffed Potatoes
Blue Cheese Re-Stuffed Potatoes 4 slices Bacon 4 med Baking potatoes; scrubbed and pricked several times with a fork 1/2 c Sour cream 1 oz Blue cheese; crumbled 1/4 c Milk 1/4 c Butter 1/4 tsp Salt 1/8 tsp Pepper Cook bacon until crisp. Drain and crumble. Set aside. Cook potatoes in microwave apart on paper towels 10-13 minutes, turning once. Let stand 2 minutes. Cut a lengthwise strip, one inch wide, from the top of each potato and scoop out flesh, leaving a thin shell. Combine scooped potato flesh, sour cream, cheese, milk, butter, salt and pepper. Mash together well. Stuff mixture back into potatoes. Heat on high 2 minutes or until heated through. Sprinkle with bacon and serve.
