PUMPKIN CUPCAKES
Perfect for the season:
PUMPKIN CUPCAKES 1-1/2 c whole wheat flour 1 c all-purpose flour 3/4 c sugar 2 tablsp baking powder 2 tsp ground cinnamon 1/2 tsp ground nutmeg 1/4 tsp salt 3 eggs, slightly beaten 1 c skim milk 1/2 c oil 1 c canned pumpkin 3/4 c raisans, chopped 1 tablsp vanilla extract Preheat oven to 350 degrees. Place 24 paper baking cups in muffin tins. Mix dry ingredients thoroughly. Mix remaining ingredients and add to dry ingredients. Stir until dry ingredients are barely moistened. Fill paper cups 2/3 full. Bake about 20 minutes or until toothpick inserted in center comes out clean. Remove from muffin tins and cool on rack. These freeze well. Makes 24 cupcakes Serving size: 1 cupcake Per serving: 140 calories, 6 g total fat, 1 g saturated fat, 34 mg cholesterol, 132 mg sodium
