a recipe for salmon patties. My mom use to make patties out of the salmon in a can and they were so good. But now her mind wonders:( and I can get her to remember what she used in them.

I make a version of it, but it might not be the same as what you're thinking.

My DH's recipe:
1 can pink salmon, skinned and boned
5-6 slices of day-old bread, cubed
1 onion, minced
salt
pepper

1 egg
bread crumbs

Mix together and form patties. Coat with a egg and bread crumbs. Fry in oil.

My (modified) recipe:
2 packets of boned and skinned pink salmon
1 can of white crab meat
5-6 slices of bread, cubed (or bread crumbs)
1 T. mayonnaise
1 minced onion
1 egg
salt
pepper

Bread crumbs

Mix together all ingredients and form into patties. Coat with bread crumbs. Fry in (olive) oil.

I also make a macaroni, cheese and stewed tomatoes casserole. Just take half a box of macaroni, cooked, and add 2 cups grated cheese (I use cheddar) and 1 can of stewed tomatoes. Mix together and bake at 350 for 20-30 minutes.

I forgot to add that you drain the crab meat and check for shells before adding.
I do buy the packets of salmon that have already been deboned because I hate picking out the backbone. It is more expensive, but worth it to me.

Annie, my DH and kids eat them with ketchup. Actually, they'll eat almost anything with ketchup! I prefer tarter sauce.
