This was so delicious, i had to share it.

Preheat oven at 325?
4 C peeled and coarsely chopped apples(approx 6-8)
2 C flour
2 C sugar
1 1/2 tsp. baking powder
2 eggs
1 tsp. baking soda
3/4 C. oil
2 tsp. cinnemon
2 tsp. vanilla
1 tsp. salt

Combine apples and sugar in bowl and set aside for 1 hour.
Beat eggs slightly, add oil and vanilla.
Mix and sift dry ingredients in separate bowl.
Add apple and flour mixture to egg mixture, alternately beginning and ending with flour mixture.
Pour into greased 13 x 9 inch pan.
Bake at 325? for 45 minutes, check for doneness with toothpick. Sprinkle powdered sugar on top and serve. Enjoy!

This cake was really good and I recommend it! We had friends over the weekend and I made this cake and served it warm with vanilla ice cream and everyone loved it. It tastes like a cross between an apple spice cake and an apple bread pudding. I am definitely making it to take to my next American Legion potluck dinner!
