Jambalaya Express
JAMBALAYA EXPRESS 1 lb. boneless chicken breasts OR combination chicken, smoked sausage, ham or shrimp. 2 1/2 tbsp. 1 step jambalaya seasoning 2 cans (14.5 oz) stewed tomatoes 3/4 cup uncooked long grain rice Cut chicken or sausage in bite size pieces; brown in lightly oiled nonstick skillet 5 min. Add remaining ingredients plus 1 cup water. Add ham or shrimp, if desired. Bring to boil. Cover. Simmer 20 minutes or until rice is done.
I made this last week. It is quite a "knock off" version of *real* jambalaya but it turned out great, quite spicy. So I definitely recommend it for those who just dont have much time to make homemade jambalaya. I used chicken and spicy sausages but next time DH wants sausage and shrimp, so we'll see
