SAUERKRAUT SALAD

1 quart sauerkraut
1/2 small green pepper, chopped
1 C. chopped celery
1/2 C. chopped onion
1 T. chopped parsley
1/2 C. vinegar
1 C. sugar
1/2 tsp. salt
1/2 tsp. pepper


Pour off juice from prepared sauerkraut. Boil vinegar, sugar, salt, pepper and parsley, stirring until sugar is dissolved. Toss sauerkraut, green pepper, onion and celery in a glass or plastic bowl with a cover. Pour vinegar mixture over kraut mixture, Cover tightly and shake to mix well. Refrigerate overnight.
